To Die For Blueberry Muffins

The best! I doubled the recipe, added a little nutmeg and 2 tablespoonfuls of dried lemon peel to the batter, which is very thick. The topping did not need to be doubled. I ended up with 18 large, moist, not too sweet muffins. (My muffin cups are 3 oz.) My husband has always requested Jordan Marsh Blueberry muffins, but now these are his favorite.

Spinach Cheese Bake

I make something similar. For the person who asked when the milk goes in...After the four has been mixed with the butter, add the milk and cook until smooth.

Easiest Focaccia Recipe

I would have liked to give this 4-1/2 stars. It is a great, easy recipe, but we found the bread (inside) to be blah. The topping, which I added assorted herbs and Parmesan cheese, was really good, but the inside needed to be "herbed-up". Next time I will mix in some of the oregano, rosemary and galic. That should do the trick.

Old-Fashioned Roasted Pecans

I changed this just a little and they are now my favorite nuts. In place of the white sugar, I used brown sugar. I also add a small amount of cumin and cayenne pepper.

Cranberry Conserve

Great flavor. yet as stated before, it was too thin. The only thing that I might do next time is to add a little Port wine (didn't have any) to cut the sweetness just a bit.

Bacon Cheddar Spread

This came out pretty good after a little additions. First, after reading the reviews, I went with Honey Dijon dressing (my husband doesn't like ranch). I used 5-6 Tablespoons. Making it sweeter, I added a few drops of Tabasco and , about, 1/2 teaspoon of crushed red pepper. I made it two days in advance and the flavors blended to make it more sweet and spicy. I will make this again...my way.

Hearty Beef Barley Soup

This is very similiar to mine except I add chopped onions and celery. I use oregano for the spice. Instead of four cans of broth, I use three and one can of beef consomme' and a little less barley. Whether made by this recipe or making with some of my changes, it is a great soup...My husband's favorite.

Applesauce Bars

I doubled the recipe and used a 9x13" pan. I add, besides the pumpkin pie spice, 1 t. ground cloves, 1/2 t. nutmeg, 1/4 t. allspice and a 1/2 t. cayenne pepper. I baked it for 30 minutes and topped, while still warm, with a mixture of confwctioners' sugar, cinnamon and nutmeg which I put in a small strainer and rubbed with a spoon to give a dusting effect. They were very moist and very, very good.

Caramelized Pearl Onions with Balsamic Glaze

I made this a little differently. After reading other recipes, I sliced up onions and put them in a skillet with the sauce ingredients. When caramelized, I did what they did in the recipe for "Green Beans with Caramelized Onions" and added frozen green beans, that were thawed. Just to make it even better, when serving, I tossed in some cooked bacon pieces. Fantastic !!

Gingerbread Cupcakes with Cream Cheese Frosting

Would have given this a 4 1/2 star rating, only because the cocoa stood out. I made mini-cupcakes (39), baked for 15 minutes and they came out full and with a nice light texture. Next time I would add more ginger and , maybe a touch of ground cloves. I will make them again !!

Lauren's Sugar and Spice Black Pepper Cookies

These are fantastic ! My husband loves me to make mini-cinnamon crumb cupcakes for work. They are so time consuming. I had a box of Krusteaz Cinnamon Crumb Cake mix in the pantry, so I used this recipe ( doubled...the box was 1 lb. 5 oz.), used a 1 1/2" scoop, rolling the sides and top, but not the bottom ( afraid that the sugar would melt and burn the bottom of the cookies), baked for 12 minutes ( the tops did not crack...didn't matter)...made 36 unbelievably great cookies. Now when he asks for his cinnamon cakes, he is getting these ( and I am sure , with no complaints. He hasn't tasted them yet , but I know he will love them.) Thank you soooooo much !

M-M-M-M-M-M Mumbles

I would like to rate this four and one-half stars. The only problem is that the topping comes out a little too dry. I have made them according to the directions. I have made them , adding dried apricots to the raisins..another time, orange marmalade...another, apricot preserves. I just made up a batch , dividing the butter in half with peanut butter. It gave it a nice "light" peanut butter taste ( and I did use the raisin filling. Maybe next time, with the peanut butter, Strawberry Preserves ? ) In place of the raisins, I would try figs...This would be the closest to the old favotite cookies " Fig Newtons".

Ultimate All in One Chicken Dinner

GREAT RECIPE WITH A A COUPLE OF CHANGES THAT YOU REALLY DO NOT HAVE TO DO. IT IS FINE JUST THE WAY IT IS. I DID USE LESS OF THE CHICKEN BROTH, BUT ADDED WHITE WINE (A GOOD HALF A CUP ). I USED RED POTATOES. I DID WHAT ANOTHER REVIEWER SAID AND RUBBED THE SEASONINGS ONTO THE CHICKEN , BEFORE BROWNING. AFTER PLACING EVERYTHING BACK INTO THE PAN, I ADDED OLD BAY SEASONING. I HAD SOME FROZEN GREEN BEANS , THAT WE HAD THE NIGHT BEFORE, SO I USED THEM IN PLACE OF CANNED (DO NOT USED CANNED VEGEIES). THIS RECIPE WILL ACCEPT OTHER KINDS OF VEGIES,USE YOUR IMAGINATION (CARROTS,ARTICHOKE HEARTS...EVEN OLIVES).WHEN MY HUSBAND COMPLIMENTS A MEAL, YOU KNOW THAT IT IS GOOD...AND HE DID !

Whipped Mashed Potatoes

THIS IS THE WAY I ALWAYS MAKE MY MASHED POTATOES. I HAVE TO, I HAVE A VERY PICKY HUSBAND, ESPECIALLY WHEN IT COMES TO "HIS" MASHED POTATOES. JUST ONE THING , USE EITHER YUKON GOLD OR RUSSET POTATOES, IF YOU WANT THEM TO COME OUT GOOD.

Lemon Raspberry Jumbo Muffins

Caramel Frosting I

USING A CINNAMON SWIRL CAKE MIX, I MADE UP 24 CUPCAKES AND NEEDED A FROSTING THAT WOULD HARDEN ( GOOD FOR BOXING ,TRAVEL). THIS WAS PERFECT....FAST AND EASY...I DID HAVE TO ADD A LITTLE MORE MILK (I USED HALF AND HALF)FOR THE LAST FEW CUPCAKES , BUT THEY WERE READY WITHIN MINUTES TO BE BOXED UP. NEXT I AM GOING TO TRY THIS RECIPE WITH GRANULATED SUGAR IN PLACE OF THE BROWN AND USE A DIFFERENT EXTRACT (ORANGE , LEMON, PEPPERMINT,ETC.) AND SEE HOW THAT WORKS.

Peanut Butter Cup Brownies

THESE ARE GREAT , I HAVE BEEN MAKING THEM FOR YEARS . ONE THING,IN THE RECIPE IT SAYS "UNWRAPPED" REESES PEANUT BUTTER CUPS. I ALWAYS TAKE THEM OUT OF THE PAPER. IF YOU LIKE THIS RECIPE, I MAKE COOKIES, USING THE BROWNIE MIX (1 EGG, 2 TABLESPOONS WATER AND 1/3 CUP VEGETABLE OIL) AND ADD REESES PEANUT BUTTER CHIPS TO THE BATTER. BAKE @ 375 FOR 7-8 MINUTES.(FOUND THIS RECIPE ON A DUNCAN HINES BROWNIE MIX BOX) QUICK AND EASY AND THE KIDS, BIG KIDS , TOO , LOVE THEM.

Applesauce Cookies II

THESE ARE , AS WAS STATED BEFORE , NOT THAT ATTRACTIVE. I WHIPPED UP SOME CONFECTIONER'S SUGAR AND MILK, ADDING SOME CINNAMON, TO MAKE A GLAZE TO TOP THE COOKIES . IT MADE THEM LOOK MORE APPEALING AND GAVE THEM A LITTLE UMPH...THEY REALLY ARE NOT VERY SPICEY, SO I DID ADD SOME ALLSPICE TO THE RECIPE. THEY ARE OK , BUT NOT ONES THAT I BAKE VERY OFTEN.

Orange Marmalade Bars

AFTER READING THE OTHER REVIEWS, I DECIDED TO CHANGE THE RECIPE, BY VERY LITTLE. I CHANGED THE SERVING AMOUNT FROM 12 TO 24 . INSTEAD OF 3 CUPS OF FLOUR , I USED 2 CUPS OF FLOUR AND 1 CUP OF OATS. I PRESSED DOWN THE FIRST HALF OF THE FLOUR/OAT MIXTURE INTO THE BOTTOM OF A GREASED 9" X 9" PAN, AND USED A MIXTURE OF HALF ORANGE MARMALADE AND APRICOT PRESERVES. WITH THE REMAINING FLOUR MIXTURE, I DROPPEED TEASPOONS OF THE DOUGH ONTO THE FRUIT LAYER. THIS WAY YOU DO NOT HAVE TO WORRY ABOUT ROLLING OUT THE DOUGH, IT FILLS IN AS IT BAKES. I BAKED IT FOR 30 MINUTES AND WHEN IT CAME OUT OF THE OVEN, I DID A VERY LIGHT DUSTING OF CINNAMON SUGAR. WHEN COMPLETELY COOLED, I SIFTED A FINE DUSTING OF CONFECTIONERS SUGER ON TOP. HOPEFULLY, THIS WILL HELP THOSE WHO WERE HAVING A HARD TIME WITH THE TOP LAYER. I BAKE EVERYDAY AND SEND THE "GOODIES" OFF TO WORK WITH MY HUSBAND. IN THE EVENING I ALWAYS ASK HOW THEY WENT OVER AND TO THESE THE ANSWER WAS "GREAT".

THIS IS A "THANK YOU " TO MEGAN . I HAD A BOX OF DUNCAN HINES PINEAPPLE UPSIDE- DOWN CAKE MIX AND DIDN'T KNOW WHEN I WOULD USE IT . I USED IN PLACE OF THE YELLOW CAKE MIX AND IT CAME OUT GREAT .
