Gluten Free Red Velvet Cake

Reviewed: Mar. 17, 2014
I took another's suggestion and made this easier by using 2 1/2 cups Pamela's Gluten Free All Purpose flour (can be found on Amazon.com for 11.37 for 4 lbs). I did not make the paste, but added the food coloring directly into the wet ingredients with my mixer on low. (From another non gluten free recipe I use to make red velvet cake). Once I was done mixing the wet ingredients I took the mixing bowl off my kitchen aid and hand mixed the dry ingredients / butter milk with a whisk. I found the first time I tried a different recipe with the Gluten Free Flour that it gummed up and was EXTREMELY thick, but mixing by hand it did not get TOO thick and made BEAUTIFUL cupcakes. Also I just used what applesauce I had on hand, which had sugar added, but it's what I had. My hubby has gone back for several cupcakes and I hadn't even put frosting on the them ;) Can't wait to make them again for the baby shower I'm hosting for a Gluten Free friend!!

Spanish Rice

Reviewed: May 20, 2012
This is a wonderful beginning recipe. I only cooked a cup of rice, so I lowered the liquid to 2 cups. I used one whole onion, a can of rotel tomatoes, and for liquid I used chicken broth instead of water. I have a pampered chef microwave rice cooker, and after I sauted the onions, peppers, and rice I added to the rice cooker. I also put about a tsp of fajita seasoning mix for seasoning. I put in microwave and cooked on high for 5 mins then at 50% cooking for 25 mins. This was wonderful the night of, but gets better the next day. A definite keeper!!

Carrot Cake III

Reviewed: Aug. 29, 2010
This is absolutely the best. I made this after my mother in law guilted me for not making my hubby Carrot Cake from scratch, afterwards this has become the 100% go to recipe. WE LOVE IT. I also use the frosting recipe for several other cakes I've made like red velvet. Thanks for the Awesome RECIPE!

Fabulous Homemade Bread

Reviewed: Aug. 29, 2010
I just started making bread in the last three weeks. I like this recipe, but I don't LOVE it. It tastes delicious fresh out of the oven, but after a couple days not as great. First time I did this I must have killed a little of the yeast as it didn't rise very high. After I did some research on various yeasts I found that I didn't need to get my yeast wet first, so the second and subsequent times I have made this I put it all in my bread machine (on the dough cycle). In order to do it this way just add all the wet ingredients first, second sugars/oils, then the oats and flour. Last put the yeast on top. I have bread machine yeast which works best when the yeast does not get wet. I also learned that you can do this regular active yeast and instant active yeast. I'm not sure with cake yeast or not, but those are the three types of yeast I happen to have at my house, so I read as much as I could about these three yeasts. I did make the two loaves because I didn't have a big enough mixer and more than two would not fit in my bread machine. Thanks for the recipe will be a great starting place to try some more things, like I was thinking of adding cinnamon and raisons after I roll out before putting in the bread pan for some cinnamon loaves.

My Chili

Reviewed: Oct. 26, 2008
Very seldom do I change a recipe on the first round (I always follow exactly, then change if I feel necessary), but I also never serve a new recipe to others before I try it first. This was an unusual time, so I changed a little. I loved this recipe out of the ones I saw on this site. I doubled the recipe and added 4 jalapenos (1 with the seeds , but I would add 2 whole jalapeno next time with all the seeds). I made the chili powder heeping tablespoons and I added 1 green pepper. Dash of pepper. This turned out wonderful. Many people at the chili cookoff I took it to, told me this was the best spiced chili there. I didn't make the cutoff for the contest because I was late, but it was almost gone before we left. Definately, a make over and over recipe.

Easy Tuna Casserole

Reviewed: Oct. 26, 2008
My hubby and I both enjoyed this. It was great twist having the fried onions on top. My hubby isn't much of a tuna noodle man, but he enjoyed this so much we will be doing this again.

Reviewed: Dec. 28, 2006
Oh my gosh! I made this for Christmas dinner and my dad had like 5ths, my sister took the recipe I printed off, and I had many compliments from my father in law! I would say this has become a staple to this holiday! And many other occassions.

Classic Green Bean Casserole

Reviewed: Dec. 23, 2006
My whole family LOVED THIS! I made it for Xmas for last year. I swore I would never make Green Bean Casserole because I really didn't like it and it was always around during Xmas at my grandma's. Well I saw this and tried it, and since we all like it so much I will keep doing it!

Stuffed Green Peppers I

Reviewed: Jun. 26, 2006
I wasn't going to rate this because I always wonder why some people give bad ratings to dishes that so many others give a 5 star rating to, but while talking to a friend she said I really should rate and explain why we didn't like it. My hubby told me he doesn't like stuffed bell peppers of any kind. I thought when I read this recipe it sounded so good and with the cheese would make a great change for us. When we ate it I was disappointed because I felt it should have tasted more cheesy and for me, it had a huge tomato flavor. Don't get me wrong we enjoy tomatoes here, I was just expecting more of a cheesy flavor.

Baked Ziti I

Reviewed: Jun. 26, 2006
I had to rerate this because, This was so AWESOME! I thought it was awesome the first time I made it, but the second time I made it was so much better. This time when I was simmering the sauce I added three cloves of garlic and about 2 TBLS Pampered Chef Italian seasoning. I took it to work for a coworker's bday and everyone loved it even the "picky" eaters.

Molly's Chicken

Reviewed: Jun. 9, 2006
This is a Keeper! I steamed some rice and sauteed snow peas, carrots, and green peppers. Then I layered the Rice, veggies, and Chicken. There was plenty of sauce left to spoon over everything. We enjoyed the flavor greatly!

Avocado, Tomato and Mango Salsa

Reviewed: May 12, 2006
Oh My Gosh! This was so good. My hubby and I had it over backed Mahi Mahi. I also ate it by the chip full what was left over. I did not use as many tomatoes as was called for because I did not want it to be primarily tomato, and I used a little bit more of the Avocado. I actually used equal amounts of Avocado, Tomato, and Mangos. I also left out the oil. With the tomatoes and mango there is plenty of juice in the end result. Definately a keeper in our home!

Teriyaki Wraps

Reviewed: May 7, 2006
Made this recipe tonight and it was Great! Hubby even liked it (which is amazing for how many veggies it had). I did not use as much Teriyaki sauce as was called for simple because I did not have that much. I used 1/2 cup of Teriyaki Sauce and this seemed plenty. I did not use as much salt due to how much is normally in Teriyaki and Soy Sauce. I used 2 fresh cloves of garlic instead of the garlic seasoning. I did add three chicken breasts, which I first cut into strips then browned in the pan prior to cooking veggies. I took the chicken out of the pan while the veggies did their thing and added the chicken back in at the same time I added the rice. I think had a used as much Teriyaki Sauce as was called for, the end result would have been fairly soupy. The only way to have avoided that would have been to reduce the sauce by boiling or reduce the amount of Teriyaki put in from the beginning. Great recipe definately going to be done again at our home. Thanks for the Recipe!

Cabbage Rolls II

Reviewed: Apr. 10, 2006
I work nights and am ALWAYS looking for crockpot recipes. My hubby said he enjoyed it. I sleep through dinner, so I ate it for lunch later. It was good the second (first) time around for me. I wish I had gotten more sauce, but that could have just been my hubby not putting it in the container he put my lunch in. Anyways, we'll make it again!

Pancho Villa Baked Tilapia

Reviewed: Mar. 29, 2006
I made this recipe for my darling husband and myself tonight. I found the fish to be lacking something; I haven't put my finger on it, yet. I will try this recipe again, but I will add some spices like salt, pepper, garlic, etc. My husband said it was good and he would eat it again. It's great meal to loss weight too, but I have to figure out what it lacks.
