Spinach and Rice (Spanakorizo)

Excellent and something different. I didn't have any Feta cheese, substituted shredded Mozarella, and it was really good.

Zucchini and Rice Casserole

This was delicious! I didn't have enough zucchini, so I mixed yellow squash with the zucchini on hand. This is one of the best casseroles, I have ever eaten!

Lemon Zucchini Bread

This was very good. I added a 1/4 tsp. of lemon flavoring (I like lemon)and made it into muffins. The lemony flavor made it seem lighter than most Zucchini breads.
