Sinful Banana Pudding

This was amazing! I made it for a Christmas Eve potluck and made one with bananas and one without for the folks in my family that are not banana fans. The pudding itself is just fantastic. I think next time I will make each dessert individually so the pudding stays longer (goes brown due to sliced bananas).

Sausage Casserole

This was my first run-in making a breakfast casserole. I used frozen hashbrowns as the base instead of shredding my own potatoes. It was a little greasy from the sausage, but the flavor was wonderful and it was even great as leftovers.

Chicken Enchiladas II

This was my first time ever making enchiladas at home. I used corn tortillas in place of flour, used a store-bought rotisserie chicken in the filling, and replaced the milk with a can of the green enchilada sauce. It came out absolutely fabulous! I made it twice within the first week.

Quick and Easy Pancit

I liked all the veggies and made it without meat, but the noodles themselves did not have much flavor. Next time, I may add spicy sesame oil and more soy sauce so that there's more for the noodles to soak up.

Sticky Sesame Chicken

The chicken did not absorb enough of the flavor to make this worth while. If I make it again, I will definitely let it marinade overnight. For a quick and easy meal it was decent.

Best Tuna Melt (New Jersey Diner Style)
