Potato and Shiitake Mushroom Gratin

I tried out this recipe for a small dinner party and it got rave reviews from everyone sitting at the table. I used Cheddar instead of Parmesan, since this was what I had on hand, and used only sliced cremini instead of the mixture of regular and shiitake mushrooms as suggested in some previous reviews. Very tasty!

Mint Chocolate Fudge

I prepared this fudge as a gift for coworkers this year, and it was well received by everyone. The fudge is very sweet and rich, so I cut it into very small pieces (about 1" square). To wrap, I stacked the squares three high and bundled up in cellophane for a pretty presentation.

Microwave Lemon Curd

Wonderfully lemony and very easy to prepare. I spooned the curd into pre-made meringue shells and topped with berries for a quickie dessert for company. It was a huge hit!

Gingerbread Biscotti

I made a double batch of these biscotti as Christmas gifts for the office, and they were an absolute hit. As suggested in other reviews, I drizzled the biscotti with melted white chocolate after the second baking, though they're quite good plain as well. They could have been a bit more gingerbready, though, so I'll probably add a bit of vanilla extract, ground allspice and finely chopped candied ginger next time around.

Pear Spread for Fruit Bread

I felt this spread was okay, but nothing fantastic. The spread came out very sweet and surprisingly bland, and it was completely overpowered by the gingerbread I served this with. Definitely needs a little je-ne-sais-quoi to boost the flavour.

Lower Fat Banana Bread I

A good basic banana bread recipe, though based on my personal preference I swapped out half of the white sugar for brown and still had great results. As mentioned in other reviews, the bread does tend to bake up faster than the recipe indicates, so be vigilant and check it about 10 minutes early! I also stirred in 1/2 cup of chopped candied pineapple and 2 tbsp finely chopped candied ginger into the batter just before it went into the oven... mmmmm!

Roquefort Pear Salad

I tried this salad because it sounded very much like one I tried a few years ago in a fancy restaurant and haven't stopped raving about since... and I'm happy to say it didn't let me down! I did make a few changes to make it closer to what I remembered: used baby arugula instead of lettuce (Belgian endive would have been nice as well), omitted the avocado, and used grainy Dijon mustard for the dressing. I think this made the difference between 4 stars (how I'm rating this recipe) and 5 stars (how I rated the salad I actually made).

Lemon Tabouli

Very tasty, and not overly lemony IMO (though I do adore citrus). Because some of the previous reviews complained about how long it took for the bulgur to soak, I microwaved the mixture for a minute on high before letting it sit, and it turned out just fine after 30 minutes. I also increased the parsley to a full 2 cups, and also added some chopped tomato and cucumber for a bit extra chunkiness. Definitely a keeper.

Kelsey's Favorite Stuffed Green Peppers

By far and above the best stuffed green pepper recipe I've found so far! Nothing fussy, quick enough to make on a weeknight, and no hassle to prepare considering I almost always have these ingredients on hand. The recipe ended up making more filling than I could put into the peppers, but it's quite tasty all on its own. I substituted 1 cup uncooked bulgur wheat for the rice in this recipe to give the filling a better "bite" (rice fillings can sometimes get mushy, IMO), and added some dried red pepper flakes dried oregano and a generous pinch of ground black pepper to spice it up.

Vietnamese Fresh Spring Rolls

Despite the amount of grumbling and cursing that accompanied my attempts to make pretty rolls, these turned out quite well and tasted a lot like the rolls at my favourite Vietnamese restaurant (note to self, do not use old cheap rice paper wrappers for future efforts.. structural integrity is key for a proper roll!) I made the rolls pretty much as per the recipe, but had to omit the cilantro as the store was out. I also added a bit of shredded carrot for extra colour and sweetness, bean sprouts for crunch and tossed the cooked vermicelli with some of the fish sauce/lime juice sauce for added flavour. Very tasty, though I must admit not quite worth the amount of effort needed to assemble if it's just a regular dinner, hence the four stars instead of five. Definitely a keeper if you're looking to impress some guests... I'll probably make some for my next summer BBQ.

Chocolate Zucchini Muffins

The muffins were okay, but nothing special. The chocolate taste was barely noticeable, in fact. A bit on the dry side as well, though that was partially my fault for reducing the amount of oil (1 cup just seemed like a LOT!). If I make this recipe again, I'll double the cocoa, and sub applesauce for part of the oil to keep them moist.

Hungarian Mushroom Soup

Absolutely fantastic! Made this recipe with fresh dill instead of dried and a mixture of mushrooms (cremini, shitake, oyster and portobello) As we were making this dish for dinner with a vegetarian friend, we also subbed mushroom broth for the chicken broth called for. Served over brown rice with a green salad on the side, it was a great meatless main dish. I found the leftovers were even tastier, though it was very tempting to finish the whole thing off on the first night. :)
