Tender Italian Baked Chicken

This was excellent and so easy. Didn't need any dipping sauce or anything and the chicken came out so tender and flavorful. The only thing I would do next time is reduce the amount of mayo, parm and garlic powder as there was just too much of it. Thanks for the great recipe

Greek Penne and Chicken

I would only give this recipe 3 stars as written because it comes out rather bland and way too heavy on the pasta. This does however get 4 stars when done with the recommendations of other reviewers: add 1 can of diced tomatoes, 1 can of tomato sauce, use marinated artichokes and double the amount of feta, onion and garlic but reduce the amount of pasta by 1/2. We still ended up with 6 very generous serving.

Lower Fat Banana Bread I

Banana Banana Bread

This was really good, moist and bursting with the flavor of banana. I did add 1 tsp of vanilla and some cinnamon. Will definitely make this again.

One Bowl Chocolate Cake III

This was a fantastic easy basic chocolate cake and is a great foil for whatever frosting you want on it. Loved it and will now be my go to cake. Did follow recommendation of other reviewer and increased cocoa to 1 cup total and was perfect amount of chocolate taste. Thanks for this great recipe.

No Bake Chocolate Oat Bars

These were really good. I'd give it 5 stars except that I did make some modifications. Used 3/4 cups butter, mixed the peanut butter in after had cooked the oat for 2 mins and then stirred in the chocolate chips once the mixture had cooled quite a bit. Tasted just like the quaker chocolate chip bars and easier for travelling this way than the chocolate peanut butter layer in the middle that would melt easier. Didn't crumble. Would probably use less sugar (1/3 cup)or add less chocolate chips next time as it was a tad too sweet.

Raspberry White Chocolate Mousse

This was pretty good but it made 4-6 servings and definitely not 16. Also didn't care for the sauce all that much. Ended up topping the mousse with sugared berries and whipped cream.

Papaya Bruschetta

Fantastic recipe and taste even better the next day. I skipped the papaya seeds all together, and reduced the oil to 2 TBS of olive oil. Served half as a cold salsa with tortilla chips and the other half lightly toasted on baguette slices. Great warm or cold. Thanks for the great recipe.
