Corn Flake Cookies II

It's good. 1/2'd the recipe. I didn't use canola oil, only margarine. Added a scoop of PB, but think it's better without. A handful of coconut, and used Honey Almond Cluster cereal (and was told that I skimped on the choc. chips)... 11 minutes. DO NOT Over-Bake!!! Crispy outside, soft inside. It's a great "surprise" cookie.

Mexican Cookie Rings

Adjusting the recipe for 96 & followed directions. Very buttery and tasty. Chilling in fridge helped. Do NOT overcook. Tried with & w/o the hole, and the hole really helps the cookie cook more evenly. They do not spread much which is nice to load up the pan (although, if you over bake them, then you've screwed up more). I'm not sure what makes them Mexican, but they were well received.

Curried Coconut Chicken

I fed an army of college men who said it was "the best they've ever had!" Because of the quantity, I baked the chicken off early almost completely cooked with salt/pepper/chinese 5 spice. Made the "Asian Coconut Rice" found here, adding cilantro and a little bit of fresh squeezed lime. Combined chicken with curry and let simmer while stir frying veggies. Served with bean sprouts for topping. First time making curry, so thanks to your recipe, I was the hero of the night.

Terrific recipe...shiny, glossy, smooth, sets up nice. Easily made in food processor. Easy does it on the milk...a little goes a long way.
