Simple Scones

My mom fought with scones for months. Hers would come out more like a pancake. I found this recipe and have made them 1/2 dozen times already. I love the almond/cherry version! The processor is the way to go. I spend more time cleaning up than the actual process itself! I love quick & easy & good when they are all rolled together!!!

25-Minute Tunisian Vegetable Couscous

Needs more spices!! The basic recipe was good but I like alittle more spice on the taste buds. It sure did make alot more than expected. I split this recipe in half (3 servings) and it was enough for 1 1/2 cups for 3 people.

Suki's Spinach and Feta Pasta

I actually made this for myself tonight (single serving). I only had about 1oz. of gorganzola and used that in place of the feta. I used small cherry tomatoes cut in half and seared the skins before I put the spinach in to wilt. Threw in the cheese, made a few rounds around the pan with my spoon and scooped it into my bowl. I would use a little more garlic next time, other than that was a great, quick and easy dish!

Henke's Hunter's Venison

What a wonderful change from our usual fried venison. After we made this we gave the recipe to three different hunters in the family. It was absolutly fabulous. I added a little corn starch to thicken and served with some garlic mashed potatoes, yummy!!

Italian Meatball Sandwich Casserole

THE FINISHED PRODUCT WAS GREAT EXCEPT THAT THE BREAD WAS SOGGY. NEXT TIME I MAKE I WILL DO THE BREAD SEPERATE, THAT COATING WAS VERY TASTY. THIS WAY BREAD STAYS CRISP AND DON'T HAVE TO EAT MUSHY BREAD.
