Barley Salad With Almonds And Apricots

Good with a few changes. Use a full cup apricots, and slivered blanched almonds. Increase turmeric to 1 teaspoon and the cinnamon to a heaping teaspoon. The heaping teaspoon of cinnamon gives a nice warmth to the salad, last but not least make sure to serve a room temp right after making. Flavors get more mellow after chilling or aging.

Couscous Salad with Dried Cherries

This was better the next day after the flavors had blended. The only changes made were to use a whole carrot, a whole cucumber and added 1/2 a red bell pepper and 1/2 a green bell pepper. Will definitly make this aging.

Vegetable Masala

Cut water to 2 cups and use 14.5oz. can tomatoes in place of fresh. Add 8 ounces red kidney beans to make complete-protein main meal.

Cheese Grits

Good side for breakfast or dinner. My husband grow up in the south and said these were the best grits he has ever had. I cut the butter to 1/2 cup and used garlic salt instead of seasoning salt. Would not change beyond that.

Carrot Salad

Have never had marshmallows in a carrot salad before and I 8+) liked it. The only change I made was to use crushed pineapple instead of tidbits. Very good will be make aging.

Southwestern Cactus Salad

This has a cool fresh taste. Having used nopales in other dishes I knew to rinse before using, and used 1 clove of fresh garlic making this a great side.

Ham and Pea Salad

Very easy, add a whole grain roll and you have a tasty and quick lunch. I did have to change it just little, I did not have cheddar used coby jack and also was out of Ranch and had to used mayo. All in all very good and easy.

Wild Rice Salad

I love this recipe. I use chicken and use 2 cups of fruit either all grapes or 1/2 grapes and 1/2 apples, the other thing I have done that is great in this salad is to use blood orange vinegar in place of the plain vinegar. Yummmm.

Gingerbread Pancakes

My husban loved them and to me they were just ok to me. I did not have molasses, used an old trick of 1/3 cup brown sugar with 1/2 teaspoon of Cream of Tartar. Next time I will use cardamom in place of cloves and increase the ginger rom 1 1/2 teaspoons to 2 teaspoons.

Apple Pecan Cobbler

This is not a traditional cobbler, but definitely try because with a little sweet cream or ice cream it is yummy. It is almost an apple cake.

Broccoli Chicken Salad

Sue's Taco Salad

Every one loves this. Whit a few changes I add avocado and sliced olives. Also brown the meat with chopped onions,and use equal amounts of taco sauce and ranch dressing (sour cream works if out of ranch dressing) for the kick that makes every one ask what's the secret to your dressing.

Marinated Tofu

Hearty Vegetable Lasagna

Mmmm. This was the best I have ever made. Cut the calories with out losing the flavor. Sub. 1/2 egg beaters for eggs and used 1 eggplant thinly sliced in place of the noodles, thus cutting the calories to 313 per serving. Also add 10 ounces of thaw and squeezed dry spinach mixed into the ricotta. Next time I may try zucchini in place of noodles.
