Pumpkin Cheesecake in a Gingersnap Crust

Perfect for after those large Holiday meals. The ginger snaps with hazel nuts is a nice differnce from the standard graham cracker crust, and the filling is a nice not to sweet custard verses the notmally heavier cheese cake filling. A must try, it was GREAT

Slow-Cooker Chicken Tortilla Soup

Gingerbread Pancakes

My husban loved them and to me they were just ok to me. I did not have molasses, used an old trick of 1/3 cup brown sugar with 1/2 teaspoon of Cream of Tartar. Next time I will use cardamom in place of cloves and increase the ginger rom 1 1/2 teaspoons to 2 teaspoons.

Potato and Broccoli Casserole

I fallowed the advice of other reviewers and pre-cooked the potatoes (a must). I also used cream of chicken soup instead of cream of broccoli and add frech fried onions in place of saltines. Over all it was ok.

Broccoli and Cauliflower Casserole

I changed it just a little and the results were great. Used shredded cheddar cheese in place of processed cheese and increased the rice to 1 cup, also used the whole head of cauliflower and the whole bunch of broccoli both of which were over 10 ounces. This would be great for a pot luck or family gathering.
