Insalata Caprese II

After all what is better than home grown tomatoes, fresh basil, cheese, all drizzled with a high quality olive oil. Yum. Who needs dinner? Just pair this salad with a good wine, and some fresh french bread to sop up the excess olive oil and your set.

Antipasto Pasta Salad

Used marinaded mushrooms, artichokes, and a high quilt cheese Italian salad dressing. Also add 1/2 a thin sliced onion. Very good.

Southwestern Cactus Salad

This has a cool fresh taste. Having used nopales in other dishes I knew to rinse before using, and used 1 clove of fresh garlic making this a great side.

Carrot Salad

Have never had marshmallows in a carrot salad before and I 8+) liked it. The only change I made was to use crushed pineapple instead of tidbits. Very good will be make aging.

Spinach and Orzo Salad

Was looking for something I could carry to work for lunch. This filled the bill perfectly when paired with some tomatoes, berries, a ginger snap cookie, and sparkling water. What a wonderful lunch.

Seven Layer Salad

Zucchini Patties

This is a good side dish, which can be easily be changed up. Some of the different things I have tried at different times to change it up a bit are to add a little cayenne pepper, use potato flakes for flour, added cheddar cheese in place of mozzarella, once I add a little Italian seasoning, and have even top it with just a little Bruschetta. Just pick a flavor that matches your meal.

Lemon Cooler Cream Cake

OoooooYuuuuum. Here's the changes I made and will make in the future. Used lemon pudding mix instead of vanilla and cut the water to 1 cup. Best if it sits over night.

Coconut Rice Salad

Was very disappointed. The contrast of hot and sweet just was not there despite the combination of raisins and curry paste. Also had issues with the texture not living up to what I am used to in a rice salad.

Broccoli Chicken Salad

Great! I made this to take to work for lunch and it was as good the second day as it was the first. This was also a nice and easy recipe to double (as well as a big hit) when the girls came to lunch one Saturday.

Carrot Recipe

Made the just the way it writhen, including sprinkling with cardamom. Was very good although a bit too sweet, next time will cut the sugar to ¾ of a cup versus a whole cup. My husband said with about half as much sugar he would like it as a breakfast food.

Ham and Pea Salad

Very easy, add a whole grain roll and you have a tasty and quick lunch. I did have to change it just little, I did not have cheddar used coby jack and also was out of Ranch and had to used mayo. All in all very good and easy.

Vegetables in Puff Pastry

This was OK, if I make it aging I may use sliced carrots the whole baby carrots were to large in compassion to the puff pastry it self, also needs a little more flavor I added black pepper and double the can leave out the diced tomatoes and still have plenty.

Lemon Icebox Pie III

Perfect. I used this to a dinner party where I did not know in advance what the menu would be, so I need something that would work with almost any type of food and not be too heave and this fit the bill perfectly. Wow what a hit. I did make a few changes. I used a shortbread cookie crust, 1/2 cup lemon juice concentrate and folded in 8 oz of cool wip.

Peanut Butter Cup Brownies

Yummy, fast and easy. I used 2 1/2 inch foil muffin cups and placed them on cookie sheet. Recipe made 18 this size, baked 30 min.

Sue's Taco Salad

Every one loves this. Whit a few changes I add avocado and sliced olives. Also brown the meat with chopped onions,and use equal amounts of taco sauce and ranch dressing (sour cream works if out of ranch dressing) for the kick that makes every one ask what's the secret to your dressing.
