Chicken Lo Mein

A really good recipe! It had things I have on hand (we just don't eat enough ginger to have fresh on hand, sadly); and as other reviewers have commented, it's a great template recipe. I modified the heck out of it, using some tofu that I fried up and asparagus and carrots, spaghetti noodles and it made a sauce the whole family enjoyed. Well, we adults added a little Sriracha sauce and it was really good. Point is, the bones of the recipe are good and that was what I needed, having never made a Chinese style brown sauce that was worth a darn to me.

Incredible. Did it in my cast iron skillet, let it cook a little too long, but it's okay, as the crunchy parts soaked up the sauce I made. I melted some butter, sauteed a sliced Pink Lady apple in the butter with a touch of cinnamon and a tablespoon or two of brown sugar. This recipe is fabulous and easy; it uses ingredients I always have around the kitchen so it's a super go-to for the day we don't make it to the grocery store or lack energy to make dinner an all-out production. Enthusiastically recommended by an 8 year old, for what that's worth! I simply don't understand why anyone would go out to order this at the markup that's usually charged when this is so simple and frugal to make.

Honey Wheat Muffins

These are hearty muffins, and the perfect vehicle for a chocolate fix. I added several tablespoons of plain yogurt, a couple tablespoons of sugar, cinnamon and 1/2 c cocoa powder. Still a healthier muffin, but certainly not lacking in the flavor department.

Baked Tortilla Chips

It was a terrible situation: Fresh from the farmer's market avocadoes and limes in a creamy guac. But, no chips! This recipe to the rescue! Brushed oil on with a pastry brush, sprinkled w/ coarse salt and cumin. Kept an eye on them in the oven. These are thick and hearty, like the chips I've had in Mexico. Better than the store.

Garlic Broccoli

Changed the recipe a little: blanched the broccoli, and added some home grown baby arugula (rocket) leaves to make a pesto type dressing. subbed apple cider vinegar, and 86ed the cheese. If I were to use cheese, it would be a Parm or Romano, but I was trying to keep this lighter. Made dried bread croutons to toss with, and had to hide the dressing from myself so I would quit dipping them and eating them. Spicy and garlicky this way; not for the faint of heart (but oh so delicious!)

Baking Powder Biscuits I

Good dough, plain in flavor. I was looking for a lighter fluffy biscuit type dumpling and used this recipe. Dropped the dough into my leftover chicken soup and boiled for about twenty minutes covered (I like BIG dumplings) and about another ten uncovered. Worked great!
