Caribbean Rum Punch

I am looking for drink recipes to serve at my sister's 50th "beach theme" birthday party. I saw this and whipped one up as a trial drink to try it out. Very tasty! but I added a pineapple/banana juice mix to it instead of orange juice and used Malibu rum. I also tried coconut/banana juice and OMG! it was even better! lots of variations you can use on this drink!

Awesome Carrot Cake with Cream Cheese Frosting

This recipe is almost identical to my mom's carrot cake recipe. It always gets rave reviews whenever I make it. The oil IS the right amount. It's supposed to be moist! And I have never had a problem with the oil sitting on the bottom of the pan? as some reviewers mentioned. So if you modify this recipe *sigh* then expect the cake not to come out as tasty as it should! And making the frosting from scratch is almost necessary! NO store-bought canned frosting! BLAH. If you are looking for a "healthy & low fat" cake, then pass this one by and make one out of tofu! Life is meant to be enjoyed and that means eating something delicious & sinful once in awhile!

Colored Sugar

My grandma used to do this when I was a kid. It's an easy and economical way to make your own colored sugar. I use the larger grain sugar. To make pink, just add a small drop of red food coloring and get to shaking! It won't be a bright pink, but more a pastel color! Great for Easter.

BAKER'S® ONE BOWL Coconut Macaroons

Made these today for my niece, who LOVES Macaroons. Never having made them before, I didn't know what to expect. But she informed me they were "the bomb" and she loved them! So, I am guessing that's a good thing. They did taste delicious! And very easy to make.

Delicious Ham and Potato Soup

Great soup! We loved it. Easy to make too. I simmered my potato/celery/ham mixture for about 30 mins. Next time I will add some carrots and fresh dill. Very yummy!

Simple Turkey Chili

Good chili. Surprisingly flavorful for a turkey chili! I followed exactly but added chipolte chili powder, a tad of garlic powder and extra cumin. Came out really good & is very easy to make. I think next time I will use one extra can of beans.

Southwestern Egg Rolls

YUMMY!! I used 8 inch flour tortilla's (all I had) diced up rotisserie chicken, replaced the spinach with chopped up cilantro and added a tad more jalapeno's for some kick. After rolling them up I coated them lightly with olive oil so they would get nice & crispy! I baked for 15 mins at 425. Served with Amy's Cilantro sauce from this site and it was SO GOOD! Next time I will try frying them and serve for my next family function!

Gourmet Chicken Pizza

Really good. Sort of similiar to a famous pizza chain (CPK). I coated my chicken in Frank's hot sauce for more of a Buffalo chicken wing flavor and left out the tomatoes (don't like them).

Fish Tacos

I'm originally from southern CA. where fish taco's are very popular. So I have had my share of good ones. I have since moved away to Northern CA. where the fish taco isn't as popular. Anyways, I had a hankering for some and decided to make my own. Saw this recipe and gave it a try. REALLY yummy! I have used tilipia, cod and halibut, and all versions are good. I have fried them and when I want a bit healthier, I grill the fish. Either way they are very tasty. Tho the fried version is more authentic. I serve with this sauce, Amy's Cilantro sauce from this site, cabbage and lime wedges and it's a little bit of heaven in a corn tortilla!

Amish Slaw

Very good! And better the next day. My husband loved it, even more then his traditional cole slaw w/mayo. This is the kind of slaw my mother/grandmother made, being from north carolina. I used slightly less sugar, but followed everything else the same. Used a combo of purple and green cabbage and white vinegar. I think using the amount of sugar it asks for, is just fine too! If something already tastes great as is, why mess with it!

Grilled Garlic Artichokes

Very tasty! My brother & I went out to a local steak place for dinner one night and saw these on the menu. We decided to give them a try and they were SO good. My brother can't stop talking about them. I found this recipe and made them for my husband. He loved them too. I am going to make them for my brother and surprise him. Since all he has talked about since our steak dinner, are the BBQ'd artichokes he had!

Annie's Fruit Salsa and Cinnamon Chips

Very tasty. I made this for a BBQ and it was a huge hit. I used granny smith apples, blueberries, kiwi, strawberries and raspberries. For the preserves I used apricot. Next I might try the pineapple preserves. I also omitted the white sugar and used only brown, and sometimes I even use honey. I made my tortilla chips out of wheat tortillas and I have also used trader joe's cinnamon sugar pita chips. Both are great!

Spiced Pot Roast

Very tasty! Different then the usual standby pot roast recipe. I used Trader Joe's mango ginger chutney, that already had golden raisins in it. Went wonderful with the spices. I had to double everything since I used a 6lb chuck roast. Cooked on low for 8 hrs in my crock pot. YUM!

Chai Tea Mix

WOW~this is REALLY tasty! It makes a bunch so I gave some away to friends. They all raved about it. My hubby and I are trying to replace coffee w/this. I think after trying this recipe, we won't have a problem! Good mixed in water but even better mixed in milk!

Cornish Game Hens with Garlic and Rosemary

OMG! The aroma while these were cooking was divine! I almost couldn't wait until they were done, they smelled that good. It was a warm day when I made these and had my windows open. Even the neighbors were asking what I was making that smelled so yummy! I added a bit of lemon juice to my olive oil and sprinkled garlic salt on the hens before placing them in the oven. Also used a pinot grigio wine. I served them with stuffing I made with celery, pecans and cranberries. YUM-MEE! My husband was quite pleased and said this is a keeper. Thanks!

Brooke's Best Bombshell Brownies

YUM! These are really good brownies. I was very skeptical to make them after reading that they required 3 cups of sugar, but I am glad I decided to try them. We tried them basically right out of the oven and the pan! They were warm, gooey and scrumptious. My hubby loved them. Second time I made them I used Mexican chocolate and cinnamon. They tasted like a Mexican hot chocolate in brownie form! This recipe is a winner~

Tomato-Cream Sauce for Pasta

Very good. I used a 28 ounce can of crushed tomatoes (all I had), 4 cloves of garlic, fresh basil, and a can of tomato paste to make it a bit thicker. It was delicious as well as easy to make on a night I had time restraints!

Ultimate Twice Baked Potatoes

WOW, these are really good. I made them as a main meal and not a side dish. Very filling, even for my husband who is a BIG eater. I used large russet potatoes and replaced the milk with cream. I know, I know.. extra fattening! but Oh! so good! I also used bacon bits due to time restraints and had a ranch dressing dip on the side. YUMMMM
