Tom Ka Gai (Coconut Chicken Soup)

YUM! This was very delicious but I did't have any lime juice on hand, so I used 1 1/2 TBS of lemon juice. It was just as good! I also added Kafir lime leaves (shredded) and lemon grass and left out the tumeric. My hubby loved it and it was so easy to make!

Easy Paella

Made this tonight and it was very good and easy to make. I was half through the recipe when DUH! I remembered I didn't have any saffron! I just added more red pepper flake and it tasted just as good.

Molasses Cookies II

These were really good and really easy to make, however they were a tad salty. Next time I will use less salt then the recipe calls for. I also didnt have light molasses and used full strength black strap molasses, they tasted really good and had lots of flavor.

Easy Sugar Cookies

These are SO good! I have been looking for a sugar cookie recipe like this for years, and finally found one. My husband devoured them within a day. Just a note, I used 2 eggs instead of one and cooked them for 6-7 mins and they came out perfect! P.S. I also rolled them in a cinnamon/sugar combo before baking them! thanks

Pumpkin Gingerbread

This was really good and moist. My husband loved it. The only thing I changed was I had limited canola oil so I used 1/4 oil I had left and the rest apple sauce. Came out great and a lower fat version of the original!

Big Ed's Cajun Shrimp Soup

Really good soup, but I made a few changes to mine. I omitted the green pepper and added Old Bay cajun seasoning and 3 cloves of garlic and lots of Louisiana brand hot sauce! Came out really good, especially when you add crusty french bread for dipping!

Italian Breaded Pork Chops

This was so so for me. I wasn't that impressed with it. i also had to cook my pork chops longer then the alotted time in the recipe since they were thick chops. It seemed a bit bland for my liking.

Strawberry Spinach Salad I

Really good salad. I didnt have any strawberries so I used fresh raspberries instead. My husband loved it. *update* I made this salad again for Easter using fresh strawberries. But I cut the sugar back to about 1/4 cup or so. It's way too sweet with a 1/2 cup. Also used dried minced onion since I was on a time restraint and didn't feel like cutting onions and replaced white vinegar with white Balsamic vinegar. Let the dressing sit for an hour in the fridge, as recipes indicates. It was DELICIOUS! Everyone raved about how tasty it was. This is the salad I WILL be taking to family functions from now on..per the overwhelming request from my family!

Spiced Banana Cake

WOW! This was such a good cake! Very moist and flavorful. Made this for my husbands birthday and he loved it. Only thing is, I won't use the allspice frosting as noted, it was way too sweet and overpowered the cake. This would be good with just whipped cream, because the cake is really sweet and flavorful.

Caramel Macchiato Cheesecake

I made this cheesecake for Easter after reading all the rave reviews about it. I loved the creamy texture and the taste was excellent. Tasted even better the next day! Just enought coffee flavor without being overpowering. Even my coffee hating brother loved it..thanks!

Janet's Rich Banana Bread

Wow! Great banana bread. Has so much flavor and is very easy to make. For the other's who are leaving less then 5 stars and then they are changing the recipe, that's your fault! This recipe is wonderful and everytime I make it, I get compliments galore. The only thing I did differently was to mash my banana's. I cook mine in cast iron loaf pans which creates a perfectly brown and crunchy crust with a moist middle. This is by far my husband's favorite recipe.

Blueberry Cream Cheese Pound Cake I

This was so good! I made some changes tho. I only had a trader joe's vanilla flavored cake mix and used only 2 eggs. I also used 1/3 C sugar and added cinnamon to the batter. Dusted the bottom of the bundt pan with sugar and cinnamon and poured the batter on top. When it was done I made a lemon icing! It was so good my husband couldnt stop eating it.

Chili Rellenos Casserole

This was awesome! I fire roasted fresh Anaheim chilis, diced them and mixed with one small can of green chilis. Also used green salsa verde instead of tomato. My husband loved it!

Easy Tuna Casserole

This was really good but I added a few things. Used 2 cans of tuna, 1/2 can of milk, 1 can of cream of chicken soup and 1 can of cream of celery (forgot I was out of cream of mushroom)garlic powder and pepper. Also mixed some french fried onions and cheese to the mix, as well as the top! Yummy!

Caramelized Onion and Gorgonzola Pizza

Really good, tho I made some changes. I used pizza dough from trader joe's, sprinkled parmesan cheese on the dough and baked for about 10 mins. Carmelized my onions with pinenuts, butter and fresh garlic. Added that with gorgonzola cheese and mozzarella cheese and cooked for about 15 mins. It was awesome!

Kosher Salt Encrusted Prime Rib Roast

I was afraid to try this recipe with all the salt it asks for. And I dont like salt that much. But wow! it was so good. I got rave reviews on it and the meat was tender and very flavorful. I will make this every year now for the holidays. Thanks!

Grandma's Green Bean Casserole

Made this for thanksgiving for my family who are all excellent cooks. For a table of 15 it obviously went pretty fast and got great reviews. Only thing I would change is cutting back on the sour cream and using frozen green beans. I dont cook with canned foods much and try to use fresh as much as possible or frozen, but was in a hurry this time. All in all it was good!
