Awesome Carrot Cake with Cream Cheese Frosting

This recipe is almost identical to my mom's carrot cake recipe. It always gets rave reviews whenever I make it. The oil IS the right amount. It's supposed to be moist! And I have never had a problem with the oil sitting on the bottom of the pan? as some reviewers mentioned. So if you modify this recipe *sigh* then expect the cake not to come out as tasty as it should! And making the frosting from scratch is almost necessary! NO store-bought canned frosting! BLAH. If you are looking for a "healthy & low fat" cake, then pass this one by and make one out of tofu! Life is meant to be enjoyed and that means eating something delicious & sinful once in awhile!

Barbie's Tuna Salad

I was looking for something a bit different and tried this. My husband and I didn't care for this tuna salad. For one, it has too much mayo and too much sweet relish. And the taste just didn't knock our socks off. I added celery & green onion. I will keep my mom's old fashioned tuna salad recipe from now on.

Garlicky Beet Delight

These are similiar to those that an Italian deli by our house serves. My hubby & I love them and when I found this recipe, decided to give it a try. I used fresh beets, 6 cloves of garlic and added fresh shredded basil. Also doubled the dressing, since I used more beets then this recipe calls for. EXCELLENT! And just as good, if not better, then the Italian eatery!

Honey Lemon Tea

My mom & gramma used to make this all the time when my siblings and I were sick or had sore throats. Minus the sugar. I now make it for my husband when he's feeling under the weather. It's much tastier & healthier without the sugar. And definitely use fresh lemon juice.

Bourbon Whiskey BBQ Sauce

Wasn't impressed with this sauce. It was good, but didn't knock my socks off. Maybe I will let it sit a day and try it again? I used expensive bourbon that I had and now I wish I wouldn't have wasted it!

Slow Cooked Corned Beef for Sandwiches

WOW! What awesome flavor! I cooked mine all day on low in my crock pot. Used only one corned beef and added extra corned beef spices, peppercorns, garlic and 1 bottle of Newcastle beer. Which gave it a really good flavor. I think the darker the beer, the better! My hubby loved this. Better the next day on sandwiches!

Italian Subs - Restaurant Style

Really good! I added mortadella & peppercini's. Shredded the lettuce and added at the end. These are perfect for parties! If you don't have time to make the dressing, use Beano's brand submarine dressing. It's really good!

This is really yummy! I'm Irish and we have eaten this dish for years. Traditionally on Halloween. But it's great any time of year, especially as a side dish for St.Patty's. This is also a "man's" dish..my husband and father-in-law LOVE it.

Good Old Fashioned Pancakes

These were okay. Batter was really thick and didn't spread well. I had to add more milk to the batter. My hubby & I both agreed they tasted just like pancakes made from Bisquik. And I think I like the Bisquik kind, better!

Microwave Lemon Curd

OMG! If I could give this 10 stars on taste & ease of preparation, I would! It is SO good! I used a combo of Meyer & regular lemons. Micro'd about 5 mins total. I couldn't stop licking the bowl! I made a blueberry lemon loaf and this was divine with it. I will definitely serve this at my tea parties/get together's with my sisters! But I won't share the recipe!

WOW! really tasty! Used Meyer lemons. I also made lemon curd off this site and spread it on the bread. I love anything lemon and happened to have a bunch of Meyer lemons I needed to use. This is great with tea!

Grandmother's Buttermilk Cornbread

I was looking for recipes to use buttermilk that I had. I found this recipe and decided to make it for my hubby, who loves cornbread. WOW! Now I see why it has a five star rating. It is phenomenal! Really good and just sweet enough. My hubby LOVED it~

Red Garlic Mashed Potatoes

These were okay. Would have been MUCH better without the sugar. Way too sweet. And I only used about 1 Tbs. I'm not sure what the purpose of the sugar is? Anyways, with some modifications and omit the sugar, they would probably be really good.

Mexican Rice II

Great Mexican rice recipe. I used jalapeno salsa intead of tomato sauce for some added kick and sauteed my onions before adding to the chicken mixture. Really good!

Sour Cream Chicken Enchiladas

These were okay. They are spicy as some reviewers noted, but not overboard. I decided to try something new but my husband said he liked my enchilada recipe much better, so guess I will stick to that! Thanks tho!

Hot and Sour Chicken Soup

Pretty good but it's too sour and not enough hot. I think I will use rice vinegar next time instead of the red wine. It also doesn't taste as good the next day. Better to eat it right after it's made.

Very tasty. I often make this for dinner, and nothing else. It's so good and light too. I use 2 bags of shredded green & red cabbage, chow mein noodles and slivered almonds. Sometimes I add chicken!
