Brisket with BBQ Sauce

WOWWWW! really good and tender! I wrapped mine in foil, baked for 5 hrs. Then took out, shredded and poured my own recipe BBQ sauce over it. Wrapped up again in foil and baked for another 40 mins. SO good. Be sure to watch the last hour w/BBQ sauce on, so it doesn't dry out! I toasted rolls with butter and a bit of garlic salt and topped with the meat..yum!

Chicken Enchiladas II

These were just okay for us. Not a lot of flavor. I thought it was a bit wierd to use soup in an enchilada recipe but I was on a time restraint and this recipe seemed quick, so I gave it a whirl. I used cream of chicken soup. Cream of mushroom just doesn't sound right. I also used jack cheese instead of cheddar and added some cumin and coriander. They were pretty good but not outstanding. Don't know if I would make again.

Greek Pizza with Spinach, Feta and Olives

Really good base for building your pizza. I made my own dough and precooked for 15 mins. Then I spread the garlic mayo sauce over it. Topped with carmelized red onions, feta cheese, Greek olives, sundried tomatoes and chicken. WOW, it was tasty!

California Grilled Veggie Sandwich

Tasty! I'm not a big meat eater and my husband doesn't care either way. As long as he gets a meal! I made these one night and he loved them. I roasted all my vegies in the oven. Used zucchini, red onions, orange/yellow peppers and made my own focaccia bread. Sometimes I add portabello mushrooms or chicken. Sprinkle garlic salt on the bread before I toast. Then I assemble them, add the cheese and use my panini press. YUM

Peanut Butter Cup Cookies

OMG! These are EVIL! They are so good. I think I inhaled 5 of them in 2 secs flat coming outta the oven! My husband loved them too. Not so sure they should be called cookies, tho. LOL. They look more like tarts! That aside, I did run out of Reese's Pnut butter cups because SOME one in my house (husband) got into the bag before I could stop him. SO I had to use chocolate kisses. Which were good too. Definitely a keeper recipe. Thanks!

To Die For Fettuccine Alfredo

The hubby & I really wanted to like this. But it was lacking flavor. I made exactly as is but added a dash of nutmeg. After we tasted it, we both added more garlic salt. My husband said he likes my version of fettuccine better so I will continue to make that one. Thats what I get for trying something new. Just some 411: WAY too much butter for one thing, and the other..use fresh garlic and fresh parmesan cheese.

Absolute Mexican Cornbread

This was very good. I followed the recipe to a T, using just a bit more cheese then asked for. it was really moist & tasty! Served along side chicken tortilla soup and hubby loved it~

Grandma's Egg Custard Pie

I love custard pie. My mom and grandmother, both from the south, knew how to make a mean custard pie. I misplaced their recipe so I found this one when I needed something ASAP and didn't have time to look. This recipe tastes almost identical to their recipe. It's very good, but does need a bit more time to cook and set. If you leave less than 5 stars because the pie didn't set up correctly, etc. it isn't the recipes fault, sorry to say. It's the chefs. You need to be careful when adding the scalded milk; add slowly. Beat egg mixture well and don't open the oven door to peek! you will have a wonderful and delicious pie!

Ham 'N' Cheese Quiche

My husband really liked this. It was easy to put together too. I used 2 different cheeses, mild and sharp and added dill and a bit of seasoning salt to the egg/milk mixture. Very tasty!

Watergate Salad

My gramma used to make a similar salad, as she was the queen of Jello salads! But I remember coconut in her's. And she would make it with lime jello sometimes. This was really tasty and a big hit at my Easter dinner.

Lemon Icing

As is, the recipe is way too sweet and the consistancy too thick. It was more like a real sugary frosting, not a lemon icing. I added the juice of 1 1/2 fresh lemons and a bit of whipping cream to thin it out. It came out perfect. But I think I could use even more lemon juice next time.

Chuck's Favorite Mac and Cheese

My mom's Southern mac & cheese is the best, in my opinion. But it's time consuming. I decided to give this a try on a day I wanted mac & cheese but didn't have alot of time. I like the tangy flavor of it. And I didn't use any cottage cheese (didnt have any). I also think next time I will leave off the bread crumbs, as this recipe is very rich as is.

Coconut Cake III

This cake was awful for me! I followed exactly and after 30 mins the top was browning but the middle was still mushy! Baked longer and had to cover w/foil to prevent the top from burning. The taste of the cake was bland. Too much hassle for a mediocre tasting cake. The frosting is also WAY too sweet. Sorry

This Sangria is really good. I have made it several times and depending on time & what I have on hand, I add or omit ingredients. Any way you make it, it's really tasty! As other reviewers have stated..go slow! it's so good it sneaks up on you!

Banana Pudding IV

My mom and gramma were from the south and this no cook banana pudding is a staple. My granny made her's more like a pie and didn't use the condensed milk. Either way it's SO good and tastes heavenly! And seriously, for those of you who change the recipe by using fat free this or that, and reduced calorie and then leave less than 5 stars because it didnt come out right or tastes funny?! WTH people! You should be banned from allrecipes!

Easy Rum Cake

This is a delicious cake. It's the Bacardi rum cake recipe that's been around for ages. Sometimes I add coconut extract. I usually use Bacardi dark rum, but have used Capt Morgan's spice rum and it gives it a kick.

Cinnamon Coffee Cake II

First off, I want to say this cake is amazing! SO good with a cup of hot coffee or tea, on a cold day. Secondly, shame on the reviewers who gave it less than 5 stars when they altered the recipe!! When you substitute ingredients for lo-cal or change amounts, etc. you can't expect good results. And to the reviewer who gave this 3 stars because he used grape seed oil? instead of vegie! the oil DOES make a difference! Grape seed oil has a distinct flavor and mainly used for sauteing, and not baking. This cake is fabulous when YOU FOLLOW THE RECIPE~
