Kalua Pig in a Slow Cooker

Reviewed: Jun. 28, 2011
Made this as a trial run recipe for my sister's upcoming luau themed birthday party. If you're going to make this, make sure you have LOTS of time to cook it. I put it on at 5pm and it was done the next day at 8am. I had my husband taste it and he said while it was good, it was a wee bland. Plus it doesn't have that flavor an authentic Kalua pork has, from Hawaii. If you've actually had Hawaiian Kalua pork, cooked in the ground, this recipe isn't even close in flavor. Either way, it was good but for the looong cooking time I don't know if it's really worth it. It makes a ton, which is good. We put Pepper Plant pepper sauce on some of it and made tacos. The other 1/2 I topped with a homemade pineapple based BBQ sauce and making pulled pork sandwiches.

Coconut Shrimp I

Made these as a "trial run" recipe for my sister's luau themed 50th birthday party in a week. They were fantastic. My husband loved them. I served a thai sweet chili sauce for dipping and they were sooooo good. I will definitely be serving these at her party!

Caribbean Rum Punch

Reviewed: Jun. 25, 2011
I am looking for drink recipes to serve at my sister's 50th "beach theme" birthday party. I saw this and whipped one up as a trial drink to try it out. Very tasty! but I added a pineapple/banana juice mix to it instead of orange juice and used Malibu rum. I also tried coconut/banana juice and OMG! it was even better! lots of variations you can use on this drink!

Carrot Cake III

Reviewed: May 10, 2011
This was good. I added 1 cup of sweetened flaked coconut, 1 cup of chopped pecans and 1 cup of drained crushed pineapple to the batter. Cut the shredded carrot down to 2 1/2 cups. Next time I will cut the powdered sugar in the frosting down to 3 cups from 4. It's a bit too sweet, and this is coming from a house of sweet tooths. I think without these modifications it would be good, but with the added ingredients it's over the top yummy!

Grandma Johnson's Scones

Reviewed: May 6, 2011
Super duper good. I used dried cherries and blueberries and lightly sprinkled coarse cut sugar over them before baking. Served with lemon curd, mascarpone and devonshire cream on the side and serve them at my brunch. Everyone loved them! Very tasty!

Double Tomato Bruschetta

Reviewed: Apr. 29, 2011
Yummy! I made these for appetizers a few hours before a BBQ dinner I was making. Served this along with grilled artichokes, garlic mayo aioli and lots of wine! Everyone was very happy before dinner and kept raving on the bruschetta!

Down Home Baked Beans

Reviewed: Apr. 25, 2011
These are sooooo good. Made these yesterday for Easter. Everyone loved them. I only used 1 cup of brown sugar, anymore and I think it would have been too sweet. Really yummy!

Irish Cream Bundt Cake

Reviewed: Apr. 20, 2011
I love the infamous Bacardi rum cake. I found this recipe and everything is basically the same as the rum cake recipe, so I thought it's gotta be good! I followed the recipe to a T and honestly the cake was just okay. My husband liked it but I thought it was too rich and too much glaze. I will stick to my rum cake recipe.

Pineapple Upside-Down Cake VII

Reviewed: Apr. 18, 2011
First off let me say that my southern born & bred gramma wouldn't be too happy if she knew I was using this recipe instead of her own. She would be proud tho that this recipe called for a cast iron pan. The southern way to make this cake is in a cast iron pan, just like my gramma made hers. Secondly, this is a FABULOUS pineapple upside down cake. SO good and moist and sorry gramma, SO easy to make! I still use my gramma's recipe but when time is an issue, I use this recipe. I used a yellow cake mix! came out beautiful!

Clark's Quiche

Reviewed: Apr. 12, 2011
Very good but makes a lot. Sometimes I freeze one or give it to my husband to take to work. I have omitted the spinach and parmesan before when I didn't have either one on hand, and it still comes out really tasty. I'm not a big fan of eggs either and I really enjoyed this recipe!

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Apr. 11, 2011
These were good but a bit too sweet for us. If I make them again, I will cut back on the sugar. They have a good flavor despite the sweetness but honestly, I don't think they are any better then Toll house!

Rhubarb Strawberry Crunch

Reviewed: Apr. 11, 2011
I'm giving 4 stars when I want to give 3. BUT since I made this recipe using ALL strawberries, I want to be fair. It had a pretty good flavor but the consistancy was unappealing. Almost like paste. Too thick for our liking. I will try this recipe again using strawberries and rhubarb next time.

Best Ever Banana Bread

Reviewed: Apr. 6, 2011
This was okay. The crust gets super brown and overflows during baking. So be sure to place a pan underneath to catch drips. One thing we didn't like was it was wayyyyy tooo sweet. I think I will stick with Janet's Rich Banana Bread from this site. Thanks tho

Buttermilk Syrup

Reviewed: Apr. 6, 2011
Mmmmmmmmm!! This is OUTSTANDING! I had some buttermilk to use up so I went searching on this site for things I could make. I found this syrup and buttermilk banana bread. This syrup is heavenly! Even before I added the vanilla I kept taste testing and it was so good just the way it was. Sort of tasted like sweetended condensed milk. YUM. But after I added the vanilla, it was even better! Almost like a buttery caramel candy. I planned on serving it on ice cream but let me tell you, it was excellent on top of the banana bread!

Addictive Sweet Potato Burritos

Reviewed: Apr. 5, 2011
These are definitely different but so tasty. I left out the soy sauce and added a chipolte pepper seasoning instead. Also used a mix of jack & cheddar cheeses and black beans instead of kidney. Served with a touch of sour cream. My meat eating husband loved them...YES! I'm trying to get him to cut down his meat intake!

Taco Seasoning I

Reviewed: Apr. 2, 2011
Excellent seasoning for ground beef. Also excellent on chicken too. I like the fact that you know exactly what's going in your taco meat. Store bought taco seasoning has so many preservatives and nasty stuff in it, like MSG & tons of sodium. Plus you can omit or add accordingly. I added a touch of cayenne because we like our stuff with a kick. Definitely a keeper!

Best Lemonade Ever

Reviewed: Apr. 1, 2011
So tasty, refreshing and good for you. Well, minus the sugar! But way better for you then store bought. A great easy recipe for lemonade. I add mint leaves to the bottom of my pitcher and crush them. Then I add my lemon juice, lemon syrup & water. Let it sit in the fridge for about a 1/2 hr and then serve. SO good. Add vodka for a grown-up lemonade with a kick!

Terrific Turkey Chili

Reviewed: Mar. 31, 2011
Very tasty! I had ground turkey and decided to make chili for chili dogs. This was very good as is but we like our stuff spicy. So I added a diced up jalapeno pepper, a bit of cumin powder a tad more pepper flake. Toasted some hot dog buns, topped the dogs with this chili, jack/chedder cheese and red onions and O BOY! was it good. My husband's new favorite chili and he LOVES beef chili.

Corn Tortilla Chips

Reviewed: Mar. 22, 2011
I had a ton of corn tortillas to use up. So I decided to make tortilla chips. I brushed both sides with oil, cut up in triangles and seasoned with sea salt and a bit of cayenne pepper. Baked them at 425 for about 15 mins. If you want crispier chips, then broil them for about 5 mins after baking. They are of course better and more authentic tasting fried, but that's time consuming and messy. These made great nachos! I also use whole corn tortillas and make tostado shells out of them.
