This is good, no doubt, but very, very sweet. Personally I think it would have been fine without all the frosting, it's sweet enough as is. I also didn't do the freezer method and it came out perfectly moist. There are a few glitches in this recipe tho, one being the cook time/temp. I had to cook mine for 1 hr 30 mins. Secondly, the amount of sugar? I left out the extra 1/8 cup because to me, it isn't necessary. As I said earlier, it's a very sweet cake. Thirdly, could use more banana. I wasn't tasting a whole lot of banana flavoring and the frosting is too much, totally overpowers the cake. That being said, it was good but I think next time I make it I will omit the frosting and cook it at a higher temp for less time. Tastes just like banana bread!
