Meatball Sandwich
I made these last night and they are delicious! My husband loved them. I am giving them a 4 and not a 5 because I did have to alter the recipe as written. As suggested by previous reviewers, I used two eggs instead of one. I added a tsp of salt and increased the Italian seasoning (which I mixed myself, using a recipe on this site) and garlic. I didnt have fresh parsley so I used dried. I didnt use the French baguette part of the recipe so I can't comment on that. I used fresh bakery baked hoagie rolls and Barilla brand jarred Marinara sauce. Also, we used ground sirloin since someone said to use the leanest beef possible and I am glad we did. The meatballs cooked up just fine at 350 degrees for 20 minutes exactly. It met and exceeded my craving for a meatball sub and I could control the fat and ingredients! Reheating them was a breeze too. Just microwaved a few meatballs and a small glass bowl of marinara on the reheat serving and stuck in the bun - delicious! Thanks for the recipe!!

Easy Pumpkin Muffins
Nice pumpkin flavor. The batter did look a little strange and I think there are cake mix clumps, but overall very easy and tasty.

Mexican Bean Salad
I made this last night and let it soak in the juices and had some for lunch today and I must say, it was delicious! I used just 1/4 c. olive oil and red wine vinegar and decreased the salt as others sugguested. I also used garbanzo and cannellini beans only (not a big fan of black beans and didn't have kidney beans) and part of a bag of frozen corn. Like others, I poured the ingredients in a plastic bowl with lid and shook the dressing. Very good. I am looking forward to sharing this with friends. Thanks, Karen!
