Fluffy Peanut Butter Frosting

i'm not a fan of peanut butter, but my my my this icing is amAAAAAzing. i used it to frost a four layer cake that i smashed out of frustration because it wasn't cooperating; nonetheless, i saved the remaining icing and i'm either going to top it on ice cream, or eat it alone - which i think is best (that is saying a lot for someone who prefers not to put peanut butter in a pb&j sandwich).

Joey's Peanut Butter Cookies

i'm not a fan of peanut butter, but my my my... these are soft and delicious. i used crunchy peanut butter and added some choco chips to some balls and left the rest plain. i prefer the ones without choco chips because they tasted so much better.

Soft Chocolate Chip Cookies II

these spread enormously! they spread perfectly round and reminded me of mini-pancakes. for some reason, the batter that my daughter played with didn't spread at all and were more delicious than the one she didn't touch. go figure.

Award Winning Soft Chocolate Chip Cookies

i don't think these are award winning cookies. i'm sorry. they just didn't taste "award winning." i seriously prefer chips ahoy. i reread all the ingredients and directions and did everything just as it asked, but the cookies didn't come out the way i expected them to - the taste was not very tasty. my daughter's friend, who's 5 or 6, said "it tastes like eggs."

Chocolate Eclair

woah! this was really super dee duper sweet. i tried a similar eclair cake that didn't ask for sugar nor frosting, and i have to say it was so much better. this cake lasted 5 days while the latter lasted only 2.

Calamari

i knew something was wrong when i mixed all the ingredients together; the batter was way too dry for the calamaris to be coated, but i tried it anyhow hoping the outcome would be great. what a waste of calamaris! this does not have any taste at all. my husband who loves calamaris didn't even touch it, much less look at it. :(

Fried Onion Rings

i love this batter. i've used it numerous times to make onion rings, as well as calamaris and cubed mozzerella. i replaced part flour with italian seasoned breadcrumbs to add extra flavor and it's just delicious.

Banana Bread VIII

this was very very moist and delicious, but for some reason the star ingredient was being overpowered by another. i think i should've blended it a little longer. or maybe it was because i made them as muffins (baked for 25) and mini-muffins (baked for 15). or perhaps i could really tell what was in the batter because i doubled everything and used butter instead of shortening. could it be? no matter, i will be using this batter again. it's unbelievably moist.

Snow Tunnel Cake

i only had a nine inch tube pan so i turned my leftover batter into cupcakes. if you think the cake is delicious, you should try the cupcakes - amazing! they're especially good if chilled (this works with decrease crumbling when cutting the cake too). also, i find that using betty crocker mix is much better than duncun hines'. the latter tends to stick to the pan/cupcake-liners, tends to be chewy and gummy, and tends to burn easily... as far as my experience goes.

Golden Rum Cake

i tried different brand's of rum with this cake - i prefer to use the generic/inexpensive rum because it has less alcohol and the flavor is just right (especially for non drinkers). if you like rum, try meyer's rum (most of my fellows thought this was way too strong.)

Pecan Lace

oh brother... i don't know what happened with me and this recipe, but i will not be making a mess like this again - while i was taking the cookies up from the pan, the cookies kept crumbling. hence, i got a lot of well-greased cookie crumbs (i'm going to use them as ice cream toppings). so i decided to put the rest of the mix in cupcake foils and bake them for 8 minutes. MAN, i was so upset. even that result came out disappointing - they didn't have firm forms. :(.

No Bake Choco-Peanut-Oatmeal Cookies

The cookie was way too soft to be eaten - like eating soften butter. i left it in the refrigerator overnight to harden a bit, but it didn't help. i left it for another night but it was still too soft. the flavor is all right, but you can't eat more than one.

Amaretto Cake

my husband recommended i crush some walnuts and pour it in the batter. it looked so delicious that i had to try it right after i took it out of the oven. my husband tried it after it cooled and he suggested i gave it another try. it was good. fyi: *cool it before you eat it. *the height of the cake is half the size of a regular bundt cake; it's short.

Pumpkin Roll II

i made this for a get-together. i was very curious to see if it taste as good as it looks (i wouldn't want to bring anything that wasn't delicious) so i tried it. :). it was so good, i had to leave it at home for myself. my husband joined in and in less than 2 days, it was gone. each time i make this, i leave a little for home. it's so yummy.

my suggestion is to cut the amount of filling because then you'll have a lot of left over. also cut the sugar, using this recipe without elimination is way too sweet.
