Salsa Chicken Burrito Filling

Reviewed: Apr. 29, 2010
This recipe is amazing but I did make a few changes. I use about 1/2 cup salsa and about 8oz of tomato sauce. I also use the low sodium taco seasoning mix so it is not so full of salt. And last but not least, I fold in 1 cup of shredded cheese into the mixture. It is just great!

Yummy Artichoke Dip

Reviewed: Jan. 6, 2010
This recipe is delicious! I doubled it for a larger crowd and added 1 can of green chiles and 1 jalapeno. The tiny bit of heat was fantastic. I also broiled the dish at the very end and the crust on the top was perfect! Will make this again and again!

Slow Cooker Stuffing

Reviewed: Dec. 6, 2009
This stuffing was amazing. I only added 2 1/2 c. of chicken broth and it was still a bit too much. Will only add 1 c. to start next time and add more as it cooks. Flavor was perfect!

Upside Down Pumpkin Cake

Reviewed: Oct. 26, 2009
I am not a dessert person but this is the best dessert I have EVER tasted. The consistency of the upside down crust is very delicious and it is now a family tradition to have this at our holiday meals. The only substitution I make is that I use walnuts instead of pecans and I leave out the cloves.

World's Best Lasagna

Reviewed: Mar. 3, 2009
This lasagna is the best lasagna I have ever had. The only changes I made were: -I only used ground beef since our family does not eat pork -I added an extra can of diced tomatoes to the sauce for texture -I cooked the sauce early in the morning. Made the lasagna and let it sit all day in the fridge before I cooked it. The taste is unbelieveable! This recipe is amazing and is a new family favorite!

Artichoke Chicken

Reviewed: Feb. 23, 2009
My family loves this recipe. I make it a little bit different than the original recipe. First, I only use 2 large chicken breasts. I pound them down until I can cut them into 4 equal pieces. The I make the artichoke mixture with fresh parm. cheese. It makes a big difference in the taste compared to store bought parm. I have done both just depends on what I have in my fridge. Then I let it bake for 25 minutes. I take it out, cover the top with 1/4 c. original bread crumbs and 1/4 c. parm. Then I bake it for another 10 minutes. It has a wonderful crust on top. Wonderful :) My whole family eats this dish. Even my picky eaters!

Easy Granola Bars

Reviewed: Feb. 3, 2009
These were very simple and very good. They also lasted 2 weeks so they served their purpose since we do not eat more than 2 a day. I added 1/3 c. more coconut and I used dried strawberries, apricots, cranberries and cherries. The strawberries were amazing. I will be making these again very soon!

Roast Sticky Chicken-Rotisserie Style

Reviewed: Jan. 14, 2009
That was the best chicken I have ever made. I only used one chicken so I halved the ingredients and cooked the chicken for about 3 1/2 hours. The meat was falling off the bone and very good. I also added one can of chicken broth to the bottom of the roasting pan. After the chicken cooked I drained the drippings and cooked broth into a saucepan, quickly whisked in 1/2 c. of flour and let thicken. It was an amazing gravy! I will definitely be making this again in the future!!

Grandma's Green Bean Casserole

Reviewed: Jan. 5, 2009
This is hands down the best green bean casserole I have ever made! I will serve this year after year at holiday events. The only thing I changed was I used fried onions and about half the cheese. I added the fried onions in place of the regular onions and then I spread a thin layer of them over the top before I added the cheese. It was amazing!

Slow Cooker Chicken with Mushroom Wine Sauce

Reviewed: Nov. 11, 2008
This recipe was a little bland but it was ok. I added an extra can of cream of chicken soup to the mixture to make sure the chicken was covered the entire time. I also added 1 tsp of Italian seasoning to add a little extra spice. The chicken was very tender but I will add more spices next time to give it more flavor.
