Artichoke Spinach Lasagna
This was AWESOME! I followed others suggestions and only used 1/2 the broth. I also added 1 chopped sweet yellow pepper because I had one on hand. I used a standard rectangular baking dish and made 12 noodles instead of the 9. I love feta cheese, but I sampled some of it with the sauce and found it a bit pungent for this dish, so I used mozzarella and parm on the top. I had some ricotta on hand, so I added a layer in the midddle. I used freah basil instead of the rosemary. It was one of the best lasangas I have ever had (boyfriend agrees)!!! Will make this again! I am not a vegetarian by any means but I did not miss the meat! SO GOOD!

Suzanne's Spinach Quiche
pretty good for my first quiche. I made some changes, omitted the mushrooms and added 1/4 cup shredded carrot, I used 4 eggs, sour cream instead of yogurt, about 6 pieces crumbled bacon and a splash of milk. I also switched the cheddar for 5 cheese italian blend. I mixed all the ingredients together before putting it into the crust. It turned out incredible!

Surprise Banana Cake
Excellent! A great way to use up those bananas sitting on your counter! I made cream cheese frosting for the top. I will make this again!
