Coffee Cake in a Mug

I have made this twice now, most recently on Valentine's morning. What a nice, simple treat. I did use more apple sauce. And cinnamon, because I love it. And added nuts. I think the dryness or gooey texture might be because of the microwaves' different cooking strengths. So play with it and enjoy the failures!

Zucchini Brownies

These were hard to mix and, I thought, would turn into a failure; however, they are very tasty! I think the problem with the dryness is related to how big your zucchini is. The large ones that we get from our gardens this time of year don't have the moisture of the smaller ones. I reduced the sugar to one cup and didn't put on the frosting, just because I'm not a frosting fan (don't tell my husband it's supposed to have frosting!) I'll try a fat substitute next time, and there will be a next time!

Warm Bok Choy, Beet and Feta Salad

This was great! I didn't use butter and probably didn't put as much bok choy in as it called for. Added some spinach that I needed to use. This is an R (repeat).

Fennel Soup II

Really simple and really good! I don't have a pressure cooker, so cooked it in a pan for about an hour. I used Trader Joe's low sodium vegetable broth. You could probably add stuff, but it's so good and simple and quick, why would you?

Cape Cod Clam Chowder

This was great. I did add celery and thyme, but the best part of this recipe is no flour or cornstarch to make it thick and, well, floury. Thanks so much!
