Homesteader Cornbread

This is good if you don't want a super sweet, really cake-y cornbread. This is real cornbread. Great with chopped jalapenos (mix them in with the flour to get them even), cheese, and chopped poblanos on top. Make sure to beat it for 5 minutes. It really does help. Great as a base for taco salad or Navajo tacos as a change. This works well with whole wheat, as well. Just lessen the wheat by about 1/4 - 1/2 cup. And beat really really well.

Crepes

Perfect every time. When it is just for our little family I use whole wheat flour only and, while they aren't as "pretty", they taste the same and work great. With ww flour and organic eggs and milk, very healthy with fresh fruit in them.

Quick and Easy Pizza Crust

My recipe books are all packed since we are moving and I was happy to find on here that is the exact one I have been using for the past 15 years. Definitely a staple at our house. I make it first and let it sit for 5 minutes while I get out all the toppings. It is fabulous to use for grilled pizza, as well. I also like to make extra so we can grill the left-over dough and eat it with "dipping" oil/seasonings. This dough is very forgiving and great to add spices to. You can use it as a great jumping off point for many uses. Thanks for posting this here!

Good 100% Whole Wheat Bread

This fabulous! Easy to double and it freezes really well! If you don't have a bread machine make sure you knead it really, really well. Also, make sure you let it rise long enough (45 minutes - 1 hour). I was in a hurry once and put it in too soon and it split a little on the side. Still was yummy, just not as pretty! I also add Gluten and I also add ground up flax seeds. Thanks!

Mom's Zucchini Bread

My usual recipe is packed while we move and I needed to use up some zucchini, so I used this. I used 100% whole wheat and 1/2 oil, 1/2 applesauce. I also had extra zucchini, so I doubled the recipe and used 5 cups zucchini. I also lessened the amount of sugar. Still super super sweet and out of the four loaves I made, one didn't have time to cool before my husband and kids gobbled it up! Thanks for the recipe!

Green Chicken Enchilada

This is the easiest and best and most versatile recipe! I wanted the chicken to go farther, so I added some black beans, corn and a little rice to the chicken and some green sauce. My husband only likes corn tortillas for his enchiladas, so I steamed some of those and used them. My kids and husband gobbled them up!!!! I like to make my own sauce with tomatillos -- easy and yummy, too!

Herman Reunion Cheese Ball

Very yummy, thanks! I mixed the parsley in with the cheese ball and that was fabulous! Definitely make it ahead to let flavors meld. This makes a lot! I made 3 smallers balls out of it to go farther. I only had almonds on hand, so I chopped them up and used them. It was very good!

Easy Cheese Ball II

A HIT with our friends who came over. It was gone! I had on hand a southwest Ranch packet, so I used that and threw in a handful of bacon with it. I also only had almonds on hand, so I chopped them up and used them. It was sooooo yummy! Next time I will try the recipe as it, but it is very versatile and I like that! Thanks!

Big Smokey Burgers

I also lessened the amount of liquid smoke. I let the mixture sit overnight to meld the flavors before forming them into patties. Then I layered them with wax paper and stuck them in the freezer. I made 8 smaller patties out of 2 lbs of meat. They were a HIT!!!! My husband oohed and aahed! I also made Belle's Hamburger Buns to go with them. VERY, very good! Next time I will carmelize some onions and maybe saute some mushrooms to go on top!

Simple Whole Wheat Bread

Love this! I use 5 - 6 c. whole wheat flour (I grind my own, and is lighter and better than store-bought -- sooooo worth the price of the grinder) and 2 - 3 c. bread flour. I also add approx. 1/4 c. of ground flax seeds. It has worked perfectly for me every time. The secret to using more whole wheat flour, is to knead it extra long and really well to get the gluten going. I use my Bosch and mix it on 2 for about 10 minutes. I also store my whole wheat flour, flax seed and yeast in the freezer to keep the nutrients and let my sit on the counter for 15 min or so to warm up before using them. I look forward to trying this with 100% whole wheat, but it is so perfect for me now, that I hestitate to ruin it. I have been using this recipe for quite a while and it is great! I often have to do this 2x/week, as my family gobbles it up and I end up giving away at least one loaf each batch! Thanks, tons!!!

It's Chili by George!!

I would give this more than 5 stars, if I could. I substitute crushed tomatoes for the tomato juice and up the amount of beans by a can or so. I also use canned diced chiles or a can or two of rotel. My family loves it!! It won an award at a chili cook-off. Thanks for the recipe!

My Amish Friend's Caramel Corn

I wish I could give this more than 5 stars! It is so easy and turns out perfectly every time. I found this recipe about 3 years ago when my husband said he felt like caramel corn for a movie. I stay far away from corn syrup, but I keep a bottle on hand now, hidden, just for this. I had a hard time getting enough to last to give away for Christmas. It is a keeper! No changes (except I leave out peanuts when it is for my DH and kids since DD is allergic).
