Baked Sweet Potatoes

Reviewed: Jan. 17, 2011
YUMMY! These were delicious! I followed the recipe exactly (though I just eyeballed the spice measurements) and was quite impressed. It was so easy and turned out great. Will definitely make again and may try some of the other suggestions below. Thanks for the great recipe!!

YUM!! So easy and so delicious. The whole family was impressed. Served on hamburger buns with a broccoli cauliflower casserole and baked beans for sides. Thanks for the great recipe!

Slow Cooker Chicken Stroganoff

Reviewed: Nov. 4, 2010
Loved how simple this was to make! Perfect for a mid-week dinner. I thought it was on the bland side though; next time I'll spice it up a bit with some onion, garlic, and herbs. But it's definitely going into the regular meal rotation. Thanks for sharing!

Rice and Lentil Casserole

Reviewed: Oct. 26, 2010
I was very pleased and pleasantly surprised at how great this turned out. My 3 year old ate it up and the hubby liked it too. It was super easy, great for a mid-week meal. I made a couple of tweaks - I didn't have any bell peppers on hand, so I used a jalapeno. I also threw in some vermicelli, paprika, and a few other seasonings. I had to use some cauliflower and celery before it went bad, so in those went too. I think a variety of other veggies would work well with this dish too. Definitely adding this into the regular rotation. Thanks for sharing!!

White Peach Sangria

Reviewed: Oct. 26, 2010
Yum! Defintiely a keeper! I brought this to a birthday party and received many compliments. As others suggested, I added some Fresca so it wasn't too strong. I'm not a fan of slimy-textured fruit in sangria, so I only added fresh apples to the mix. I provided a variety frozen fruit instead of ice cubes (which actually was pretty interesting because you got a different flavor depending on the fruit you used). Some fruit still got slimy as it melted, but at least you could pick and choose what you put in. For extra peach flavor, I added some peach juice (found at Trader Joe's). Thanks for sharing!!

Baked Whole Cauliflower

Reviewed: Oct. 5, 2010
Yummy! I'm not a cauliflower fan, but I thought this was delicious. My preschooler ate it up and my husband went back for seconds. I was disappointed there weren't any leftovers. Thanks for the great recipe!

Stovetop Bratwurst Dinner

Reviewed: Aug. 30, 2010
I used uncooked brats, browned them and then added the soup and milk. Per another review, I also added some onion, Worcestershire sauce, garlic, and a dash of cayenne pepper. Once they were cooked, I sliced up the brats and added the slices back in the sauce. I didn't use any cheese and didn't think it really needed it. Served it over pasta and the whole family loved it! Even the picky 3-year-old cleaned her plate. Great recipe that was super easy to make - thanks!!

Pork Chops and French Onion Rice

Reviewed: Mar. 18, 2010
Sorry, I wasn't a fan of this. It was a little too salty, I'm guessing from the soup, since I didn't add any salt. And the pork chops were on the dry side. We ate it, but probably won't be making again.

Corn and Avocado Salsa

Reviewed: Mar. 8, 2010
This is one of my go-to dishes, especially for parties. I always receive compliments and never have left-overs! Like other reviews have suggested, I also add in a can of black beans. Quick tip: soap and water won't take the residue from the jalapenos off your hands, but olive oil will. Just rub some on your hands, then wash and dry. Voila!

Special Butterscotch Chip Cookies in a Jar

Reviewed: Oct. 15, 2009
I gave these as part of a gift basket last Christmas. All of the ingredients are pretty hard to fit in the large mason jars; you have to pack down each individual layer. But, they looked great once I got it all in there; the colors of the different layers are very complimentary. I've also made these for bake sales and office events. They always get rave reviews!

Restaurant-Style Chicken Tenderloins

Loved this recipe - it was so fast and easy and it turned out great. It will definitely be a go-to recipe for a mid-week meal. I cooked it on the Forman grill and served it with seasoned basmati rice and peas. Yummy!

Baked Dijon Salmon

Reviewed: Nov. 21, 2008
I was out of bread crumbs and had to substitute cashews for the pecans, and it still turned out great! Received plenty of compliments and requests to make it again. I was really looking forward to having the leftovers for lunch the next day, but there weren't any!

Charline's Sweet Potato Casserole

Reviewed: Nov. 21, 2008
LOVE this recipe! I always receive compliments on it, even from proclaimed yam-haters and coconut-haters. Like others mentioned, I reduce the butter and sugar (especially if I put in the marshmallows, which I sometimes leave out). Also, I always use fresh yams, though I'm never quite sure how many make up 4 cups. So I usually buy 4 large ones and that works great. Lastly, I've noticed this dish turns out best when there's no lumps in the yams, so I use a blender after mashing. Thanks for the great recipe! It's now a standard dish at Thanksgiving and Christmas.

Broccoli Chicken Casserole I

MMMMM YUMMY! As others suggested, I substituted the mayonaise with 2/3 cup of milk. I also added some garlic, paprika, and basil. Very happy with the results and will definitely make it again.
