Pebber Nodder (Danish Christmas Cookies)

A very subtle cookie, not very sweet - which isn't a bad thing... I tend to like my cookies quite sweet :-) I doubled the cardamom & cinnamon, added the white pepper and mace. I did roll into little balls rather than roll and cut. Next time I'll probably add the vanilla like some other reviewers, and roll in icing or granulated sugar. I wanted to try it first as originally written before experimenting. Mine turned out quite cakey in texture - not chewy at all. I think in the holiday season with all the super sweet things on the cookie platter these are a nice change.

Christmas Cookies in a Jar

I have to say I love this cookie. It is very sweet with the white chocolate chips (but I'm one of those who thinks cookies should be sweet... and rarely do I find something "too" sweet). The tang of the orange-flavored cranberries is a nice change from raisins, and helps absorb some of the sweetness; consider using 1/2 a cup of white choc chips if you're not wild about overly sweet. The cookie bakes up lumpy (like a normal oatmeal cookie), but it is pretty with the red and white. After putting all the dry ingredients in a bowl, in a separate bowl I beat the egg & vanilla, then poured in the melted butter and mixed well. Then I dumped the flour mixture into the butter, sugar, vanilla mixture and stirred. You definitely want to stick in the fridge because the melted butter makes it quite goopy. I got about 30 medium-ish cookies, so when not giving as a gift I'll be doubling the recipe. I'll definitely be giving these Cookies in a jar for Christmas! Thank You!

Grandma's Gingersnaps

Mine look just like the photos and taste awesome! I didn't notice when I first read the recipe (before printing) that it says sift 3 times -- sift twice, then when adding the dry to the butter/sugar it says sift in dry ingredients. I think this makes a big difference in the texture of the cookie - yum! Thank You for the recipe!!

Chocolate Brittle Surprise

Very Very Addicting! I didn't have any version of a saltine cracker; I had plain graham crackers, Ritz (generic) round crackers, and had Vanilla Wafers which I thought would be a good mix. All turned out yummy. I'm a huge fan of salt/sweet combo, but didn't like the softness of the Ritz, so can't wait to try the Saltines. The Vanilla Wafers I turned upside down on the cookie sheet, so the candy would stay on top easier. The Graham Crackers were delish! I used a 2-cup pyrex measuring jug to melt the butter and brown sugar, and (following a hint by another reviewer) made sure the butter & b.sugar was mixed really well, then poured over the crackers... without too much "miss." Putting the crackers as close together as possible is an easy fix, and dunking each cracker seems messier and more time consuming for this lazy-at-11pm-when-I-made-these-last-night baker ;-). Following another hint I used semi-sweet & milk chocolate chips, and finely chopped the pecans, then smushed them as best I could into the chocolate with a potato masher. I set the timer for 13 minutes; it was bubbling at 10 minutes, but I wanted the candy to cook a bit longer... so pulled it out at 13 minutes, being careful not to let it burn. I use an airbake cookie pan, which I've found great success with! My husband didn't seem to be a big fan, but I just say More For Me! Thank You!!

After-Thanksgiving Turkey Soup

This is a terrific (if not the healthiest soup option...) recipe! I didn't measure out any liquid from what I used to get the turkey meat off the bones. I just added more brown rice to soak up the extra liquid. There were onions from the cooked turkey already, and I only had one in the fridge, so one onion, only a few baby carrots (not a huge fan of carrots - makes soups too sweet for me), 2 cups brown rice, 1/2 a bag of frozen peas, and 1/2 a bag of frozen chopped broccoli. 1 can of condensed milk. I used a vegetable flavor cube (didn't have granules), quite a bit of black pepper, a 'southern style blend' spice mix and another garlic-based spice blend (didn't have any poultry spice or celery salt) and used quite a bit of Beau Monde Seasoning. I put what I had left of the stuffing in there (about 1 cup), and didn't put a whole lot of salt -- better under salted for folks to add their own is my soup-making motto. I let it cook and simmer all day -- and YUMMY!! DH tasted it and thought it was good, and he's really picky. Thank You For this different take on a favorite Holiday Leftover!!

Whipped Shortbread Cookies

I may come back and re-rate it because the failure of the cookie probably had more to do with the user... the flavor is great -- I made the mistake of using the food processor. Don't do that. Mine got really hot and by the 3rd addition of the flour (following the advice to beat and beat...), the butter broke down and it started cooking in the food processor. I baked 'em anyway -- for 20 minutes(!) and they were delish, but I had to eat them with a spoon because they just fell apart. So I mashed them up in a pie tin and made a no-bake chocolate mousse and put it in the fridge! YUM!! I will try again with the traditional hand-mixer... cuz I love shortbread.

Chicken Noodle Soup II

Excellent Soup!! I didn't have a lot of time, so with a pre-cooked whole chicken from Trader Joe's, and two boxes of low fat and low sodium chicken broth... I followed another reviewer's suggestion to save time and sauteed vegetables in olive oil and garlic. I used what leftovers I had (small zucchini, a few broccoli heads, a little celery and a few baby carrots) along with a chopped onion. I used frozen peas instead of corn. I didn't have time to try the homemade noodles (though am looking forward to trying them) and used really wide egg noodles. We like LOTS of noodles, so I doubled the noodles called for. Salt, Pepper, Garlic Salt, a dash of different season salts, some thyme and rosemary and my husband really loved it! Thanks for this easy and basic recipe that only took about an hour and 1/2!!

Lemon Square Bars

My guests loved them! I cooked the crust a little longer to get it slightly brown -- and used real lemons, and had 1/8th of a tsp extra lemon juice, which I added. Delish and a keeper!! Thank You.

A Friend of mine did this and it was Fabulous!! She used Dijon & Wooster, then smeared it with crushed garlic -- she forgot about the flour, it was so yummy!!

Tater Tot Casserole I

I doubled the eggs, and my husband's comment was "it doesn't taste like there are eggs involved" -- cutting back on the milk would probably help. I added 1/4 spicy sausage to the regular sausage, which gave it really nice flavor! It was soupy -- maybe putting it back in the oven for another 10 minutes would help. Tasty, but I didn't get a quiche consistency :-(.

Orange Cream Fruit Salad

Love the pudding orange juice combo with sour cream! Am thinking that alone without fruit would be a nice pudding dessert... I made the recipe exactly as stated, and hadn't read any reviews beforehand -- drained the fruit knowing it would be way runny and weird if I didn't. Glad I did. I have a huge sweet tooth and found this perfectly sweet -- subbing cool whip, or adding more sugar etc... would put it over the top for me. When it isn't the holidays it'll make a great summer desert -- over angel food cake or even short cake. Am definitely adding this to my holiday tradition(s). Thank You Lori!

Wassail Punch

Very Good! For an adult beverage version I added some Captain Morgan's Spiced Rum, which makes it a fab New Year's Open House drink. I didn't have whole cloves, but will be sticking them in an orange when I get some. Easy and very tasty.

Mark's English Sausage Rolls

My Scotsman thought these were excellent! My phyllo dough (edited to add: oops! puff pastry & phyllo dough obviously are not the same... these are good with phyllo, though!!) didn't have little cutting lines, so I just cut one of the rolls into 6 squares, and put a slightly more than thin coat of dijon mustard. I didn't add a thing to the sausage and he is raving. He's lived here a year and 1/2 now and is getting homesick - for food items, mostly... so for him to love them I'm thrilled!! He noted that yes, the sausage meat is different (his take on British sausage is that it has lots of non-meat fillers), but that it tasted like a good butcher's sausage roll. (like Oliphant's or Gregg's). After baking we put them on a cooling rack to let the remaining grease drip -- but we found them only too greasy if you let them sit on the pan (i.e., in the grease) you baked them on. I used a Pampered Chef stone and they turned out really well. I baked them 10 minutes and then checked on them every 3 minutes -- probably next time I'll take them out at 13-15 minutes -- make them a little less crunchy. Once I saw the sausage bubbling out the ends I knew the meat was cooked. ** Thank You for this recipe!! **

Buttermilk Chocolate Cake with Fudge Icing

Flavor is excellent. I only gave it 4 stars however, because I want more frosting. I took a photo, which shows how the frosting doesn't cover the entire cake. Sure, it is rich, and sweet... but I *like* chocolate cake that way! The more the better!! I did follow someone else's suggestion of using 1/4 Cup of Cocoa for the cake batter, and am glad I did. Now I'm off to make another batch of frosting - yum! -

Flip-Flop Cobbler

Very easy and Very Tasty! I like cinammon & allspice, so sprinkled a bit on the raw batter before adding the fruit, and then sprinkled a small amount of brown sugar on the top - the fruit in syrup I used would be sweet enough so I skipped the other 1/2 cup of sugar. I think next time I may add a bit of vanilla to the batter, just to see what happens... but *as is* this is a great recipe!

Basic Fondue

I left this with my husband to make... and he added white wine instead of beer (as previous reviewers had had success with). The flavor was very good - but it was really watery with a large lump of cheese at the bottom - I think it doesn't take too long to 'set' - and he left it cooking for a longer time than required... I'm pretty sure it had more to do with the cook than the recipe... I'll be in charge next time!

Homestyle Turkey, the Michigander Way

This was my first turkey on my own - Celebrating Thanksgiving in Scotland - and this was a big hit with everyone!! I made up my own seasoning salt (Beau Monde, Bay Seasoning, Garlic Powder, Salt, Crushed Black Pepper, Celery Salt & a few I don't remember the names of) but followed the rest of the directions to a "T"! This will be my 'regular turkey' recipe for future Turkey Dinners.
