Chocolate Cream Pie II

I used 4 heaping T. cornstarch instead of 3. I cut the milk to approx 2 3/4c. The mixing was a royal pain with the sugar and egg yolks. I could not get it to cream, just lumps so I warmed up 1/4c. of the milk (room temp in microwave) & beat that in with the sugar & yolks & got the smoothest consistency. Then added the other ingredients. It was luscious.

Smooth and Cheesy Omelet

This omelet is wonderful! Didn't expect it to be this good. I did not have any mushrooms so used black sliced black olives and diced green chiles. Also some salsa. I put a slice of yellow cheese ontop and let it melt, then used sour cream when fully cooked, A 10!

Oatmeal Cake I

A very moist cake! I have made numerous oatmeal cakes but never where I have soaked the oats ahead of time. I think it is the pre-soaked oats that make it so moist. I did cut the sugars by 1/8 to 1/4. There is a lot of sugar in this recipe and I figured a little missing here, and a little missing there would not hurt it, and it didn't. I also cut the nutmeg by about 1/4 teaspoon. I don't like the over powering flavor of nutmeg. This will be one of my regulars!

Tart Lemon Triangles

Someone said they had tasted "better bars." I loved these bars! I've made lemon bars before & been so unhappy with their taste & texture. These tasted much like the filling in lemon meringue pie! I took them to a party & they were devoured in no time with heaps of praise. I did take another reviewers suggestion & added about 1/8t. nutmeg & I add 1/3 c. powdered sugar to the crust. I like "sweet" & the lemon filling is tart, as the name implies. Excellent combination of flavors, in my ever so humble opinion.

Low-Fat Blueberry Bran Muffins

These were good the first day but the next day they were almost too moist & flavorless. I would not make these again without modifying the recipe--maybe cutting back on the milk & adding some cinnamon or something. Not sure why these were so blah the second day.

Sour Cream Raisin Pie V

I was so excited after reading all the reviews, but I found the pie to have a sour "bite" to it. I think next time I may try it without the lemon juice (not sure if this will affect the setting process as it cools, but will try it). I did use only 1/4 t nutmeg. I think the pie would be awesome if it were not so tangy. Possibly the person who used the yogurt had the right idea!
