Catherine's Spicy Chicken Soup

Yummy! We eat a lot of spicy food, and this was not very spicy to us, especially after adding sour cream. We even added a tsp of cayenne pepper.

Tex-Mex Turkey Soup

My husband just reminded me to rate this soup a five :) This is a great and extremely easy way to use leftover turkey. We substituted fat free greek yogurt instead of sour cream but otherwise kept it the same. We like things spicy, so adding some cayenne pepper, hot green chiles, or jalapeno peppers might be nice in the future. Great soup!

Scaled down the recipe to 2 servings (2 bananas) and used 1/4 c of brown sugar. Only had Neapolitan ice cream, but it still tasted great.

Frozen Mojito

I may have done something wrong (given the number of really positive reviews), but the recipe calls for a 6 oz can of frozen limeade concentrate. Because the typical frozen limeade concentrate can is 12 oz, I doubled the rum from 8 to 16 (1.5 fluid oz each: so 24 fluid oz total) which turned out to be WAY too much rum. Because it wasn't really drinkable, I put it in the freezer and am going to blend it all again with another can of limeade.

Peanut Butter Fiend Quesadillas

I used a stayman winesap apple and mostly just tasted peanut butter. Perhaps a different apple would have been better. I ended up drizzling the quesadilla with honey, but will probably put honey in the quesadilla next time. Also, one big quesadilla is super filling for one person! Next time, I'll just do a smaller half quesadilla by folding one tortilla in half.

Cream Cheese Pound Cake I

Fantastic pound cake! I halved the recipe and made it in a loaf pan, baking it for exactly the same amount of time. I made the recipe without any alterations to the ingredients and found the cake to be extremely moist and not too sweet. I'm sure I'll make this many times in the future!

Old Mississippi Eggplant French Fries

I used cornmeal because I didn't have cornmeal flour, but the cornmeal started burning and smoking in the frying pan. So, I put the remainder of the eggplant fries on a baking pan and baked them at 350 and they still turned out well. Very tasty, especially dipped in ranch dressing. Make sure to eat them warm or hot, when they cool down they start to taste gooey.

Spaghetti Carbonara II

Good recipe but had to modify because it came out a little dry and a bland: added a little more olive oil, cheese, and garlic, used beer because I didn't have white wine, and added 2 tablespoons of sour cream. Was very easy to modify and tasted great.

Took a bit of time but it was worth it. I increased the recipe's spices to taste, and also added a little cayenne pepper (husband and I like it spicy). Will definitely make it again.

Japanese Chicken Wings

Will definitely make again and again!! As recommended, I baked the wings in a foil-lined baking pan, coating them with seasoned salt, pepper, and flour (didn't use eggs), and then spraying them and the pan with Pam cooking spray. While they were baking (approx 30 min at 400 degrees), I made the sauce - adding 2 tsp each: toasted sesame seeds, roasted red pepper flakes (we like spicy), and cornstarch to thicken it up. I basted it every ten minutes - cooking them about 25 min in total with sauce on. Excellent! We used fresh wings from the local farmer's market - best wings we've ever made - better than in some restaurants!! Enjoy!

excellent! as recommended, I used all butter instead of butter & shortening; I also added 1 c. cranberries (instead of raisins) and 1 c. chocolate chips; used nutmeg instead of clove. My husband says it's his favorite cookie!

Florentine Artichoke Dip

Perfect! Haven't ever had a better one at a restaurant. I like to use one normal cream cheese block and then one neufatchel block in order to cut some (albeit just a little) fat and calories. I always eat it with tortilla chips. I've had several people ask me for the recipe.

Simple BBQ Ribs

Excellent! Even with all the great reviews, these were better than I expected. I had 2.79 lbs of country ribs. I boiled for 1 hour; baked for 1 hour, 15 minutes. Fell off the bone, had to use a spatula instead of tongs to put them on our plates.
