Bacon-Roasted Chicken with Potatoes

WOW! This is so easy and yummy! The whole family devoured it! The only things I did differently was to use boneless thighs. Also, put some provalone cheese on the last few minutes. Using liiquid from the pan to make a sauce, 1 cup liquid, 2 tablespoons flour and 1 cup milk.

Hearty Ham Casserole

Everyone loved it! I made some changes though. I was stunned that I had no onions.....I always do! So I used 1 tablespoon of dry onion soup, 1tsp of crushed garlic and topped with crunchy peppered onions (dry in produce section). Also used shredded refrigerator hash browns instead of diced cooked potatoes. It was great!

Upside-Down Apple Pecan Pie

Oh my.....Just the best! Have made this pie twice this week! The only change I made was using 3 fresh apples and 1 can of apple pie filling. I only had 3 apples. First pie was gone in a day! Also, very easy and looks wonderful.

Chocolate Upside-Down Cake

Oh MY!!! This is just great....Will definetly keep this one! If you love chocolate, you will love it. I used a devils food cake instead of German Chocolate.

Pear Custard Pie

This is GREAT!!!! It was wonderful and I even forgot to put the butter in! (left it in the microwave...) I cannot wait to make it with butter. If it is wonderful without the butter, I can't imagine what it will be like when I use the butter. This one is really a keeper!

French Buttercream Frosting

It is creamy , with just a hint of sweet. I used salted butter. Instead of regular flour, used Wondra. Also used butter flavored crisco and in addition to vanilla, added a touch of rum flavoring. This frosting tasted like it was from a french bakery! Not sure why, but did not take nearly 10+ whipping time...was light and fluffy within 3-4 minutes!
