Delicious Salmon

Amazing salmon recipe! I did not marinade the salmon because I was short on time, but otherwise I followed the recipe. I put the marinade in a jar and shook it to blend the oil and soy sauce, then poured it over the fish before broiling. When the salmon was finished I crumbled it over a salad of baby spring greens, green peas, and mandarin oranges. I added more soy sauce and oil to the remaining marinade and used it as a dressing over the salad; it was delicious! I will make this again!

Slow Cooker Lime Chicken with Rice

YUM!! I only gave it four stars because I changed a bunch of stuff, but it was delicious! The things I changed were: chicken thighs, brown rice, homemade seasoned chicken stock, and fresh thyme. I added to the recipe: diced peppers and onions, and one can of diced tomatoes. The rice was really creamy and the flavor was great!

Salmon and Swiss Chard Quiche

This was really good! I made a lot of changes to it because I cannot eat dairy, but the salmon and swiss chard combination was really delicious. I skipped the first two steps because I used a pre-made pie dough and good quality canned salmon (this cut out some time and work). I also used more swiss chard and less salmon because that is what I had on hand. I used olive oil in place of the butter, and Almond milk in place of the milk to make this non-dairy. It turned out wonderful and I have made it several times! I also use the core part of this recipe (3 eggs to 1 cup milk in a pie shell) to use up just about any left over veggies. If you have the pre-made rolled pie dough on hand the prep part of this dinner is done in just minutes!

Turnip Casserole

I have finally found a really great recipe for turnips! This was very easy and tasty! I didn't have any trouble with the turnips tasting bitter; in fact they were sweet and custard like. I will definitely make this again.

Beetnik Cake

Delicious! I made this cake into two 8 inch rounds; one to take to a potluck and one for home, they were a big hit with both crowds! The only thing I changed was to glaze one of the cakes with a warm brown sugar pecan glaze (brown sugar mixed with chopped pecans, milk, and powdered sugar)and I also left out the allspice because I didn't have any. Both cakes were eaten up, and I left the party with an empty plate! If you are worried about an earthy beet taste or picky eaters try using the glaze; pureeing the beets rather than grating them might help too.

Turkey and Quinoa Meatloaf

This was very good, it tasted different from beef meatloaf, but still very good. I was short on time, so I actually made this in muffin cups. I put a small piece of bread in the bottom of each cup (to soak up juices) and then the meat mixture, baked for 15-20min. The kids loved it, I would make this again.

Cauliflower Radish Salad

Yummy!! This was so good in a pita! I did change it a bit; I added shredded chicken and I grated the radishes. I also used a green cauliflower (no, this is not a broccoli mix. Just a green cauliflower). I will make this again!

Chocolate-Covered Marshmallow Cookies

Wonderful cookies! They are almost brownie/cake like in texture and taste. We added salted peanuts to the dough before baking. We topped the cookies with three mini marshmallows and an upside-down Hershey kiss at 8min of baking and then baked 4min longer.

Wheat Germ Whole-Wheat Buttermilk Pancakes

Very good! I used 1 1/2 tsp baking powder and 1/2 tsp baking soda as recommended by another reviewer, and our pancakes were light and fluffy. They are not sweet at all, but we loved them. They were a big hit with the kids!

Hot Tamale Pie

This was so good! A hit with my whole family. I left out the cheese, because of allergies, and used three boxes of Jiffy. It was really easy, although time consuming considering you have to cook it and then bake it. Using left overs would really speed up the meal. I would definitely make this again!

Wonderful! I left out half the sugar. I swapped half wheat flour for the AP flour, and half the butter for oil. I added Craisins and pecans. Perfect for a breakfast bread!

Pumpkin Flax Quickbread

Very good! I used white whole wheat flour, added one egg, and switched half the sugar for honey. I baked it in a 9x13 pan, and it made a delicious dense and moist breakfast bread.
