Chocolate-Covered Marshmallow Cookies

Wonderful cookies! They are almost brownie/cake like in texture and taste. We added salted peanuts to the dough before baking. We topped the cookies with three mini marshmallows and an upside-down Hershey kiss at 8min of baking and then baked 4min longer.

Tom Ka Gai (Coconut Chicken Soup)

A-MAZ-ING! I changed a few things based on other reviews. I used left-over chicken from the night before, chicken stock instead of water, I left out the cayenne and turmeric, I added half a can of sweetened shredded coconut to balance fish sauce, culantro instead of cilantro, 1 cups broccoli slaw, and served it over brown rice. It was so good! Pretty fast too, I would make this again!

Kielbasa and Cabbage

This was great! I added mushrooms, and put the sausage in at the same time as the cabbage, so the cabbage would not over cook. I also need to add extra seasoning, but I had a really big head of cabbage. It turned out perfect and really flavorful!

Slow Cooker Lime Chicken with Rice

YUM!! I only gave it four stars because I changed a bunch of stuff, but it was delicious! The things I changed were: chicken thighs, brown rice, homemade seasoned chicken stock, and fresh thyme. I added to the recipe: diced peppers and onions, and one can of diced tomatoes. The rice was really creamy and the flavor was great!

Turkey and Quinoa Meatloaf

This was very good, it tasted different from beef meatloaf, but still very good. I was short on time, so I actually made this in muffin cups. I put a small piece of bread in the bottom of each cup (to soak up juices) and then the meat mixture, baked for 15-20min. The kids loved it, I would make this again.

Delicious Salmon

Amazing salmon recipe! I did not marinade the salmon because I was short on time, but otherwise I followed the recipe. I put the marinade in a jar and shook it to blend the oil and soy sauce, then poured it over the fish before broiling. When the salmon was finished I crumbled it over a salad of baby spring greens, green peas, and mandarin oranges. I added more soy sauce and oil to the remaining marinade and used it as a dressing over the salad; it was delicious! I will make this again!

Fluffy Pancakes

I doubled the recipe and thought it was too wet, so I added 1/2 cup oatmeal. I also made this with Almond Milk. It turned out really good, not sweet, but perfect with strawberries and syrup over the top.

Peanut Butter Oatmeal Cookies

Yum, Yum, Yum! These cookies are so good! I followed the recipe except switching margarine for shortening (trying to use it up, I will use ghee next time). I also used crunchy peanut-butter, regular oatmeal, and chocolate chips. This is our new go-to cookie recipe!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Excellent muffins! I made up a batch today and they disappeared! The only thing I changed was to add chopped pecans to the mix before the flour, to help break up the bananas and strawberries. I was also making a batch of Strawberry Syrup at the same time as these muffins, so I just skimmed off 1 cup of smashed strawberries from the top of the cooking syrup and added them to the muffin mix with the bananas. Yummy, yummy, yummy! I will make these again! ---Made this a second time: I switched out 1 cup of shredded yellow squash for the bananas and it made a wonderful strawberry squash bread!

Coleslaw with a Difference!

This was so good! I did change up a few things; I added basil, garlic powder, onion powder, dill, and pineapple salsa (to add sweetness). I also did not measure anything, I just threw it all together until it tasted the way I wanted. I will definitely make this again!

This was a wonderful soup! I changed it up a little bit to suit our tastes, but the thing that really makes this soup great is sprinkling tortilla chips over the top. I will make this again!

Urban Legend Chocolate Chip Cookies

Fabulous cookies! My 4yr old and I made these, we followed the recipe exactly, and they came out perfect! The were chewy inside, crispy outside, and just sweet enough to be satisfied after 2 or 3 (ok, I ate waaay more than that, but who's counting?). We will definitely make these again!

Homemade Pancake Mix

This is a great pancake mix! I added 1 cup of oatmeal in place of 1 cup of AP flour, but otherwise followed the recipe. It came out wonderful; with syrup on top it's just sweet enough and my kids ate it up! -----I usually make this up as a baked pancake by doubling the batch and pouring it into a greased baking dish. Bake at 350 for 1hr.
