Persimmon Cookies II

Reviewed: Nov. 23, 2014
Excellent cookies. They were soft and cake-like. Didn't really taste the persimmon, they taste just like pumpkin bread.

Easy Batter Fruit Cobbler

Reviewed: Aug. 15, 2013
Very good! The dough part is sweet like cake, but this was perfect because our fruit was not very sweet. We used peaches and blackberries. I doubled the recipe, and used 1 cup of sourdough starter in place of 1 cup of flour and milk. It was delicious!

Sourdough Scones

Reviewed: May 10, 2013
So good! I made this with Whole Wheat, salt, Baking Powder, Baking Soda, Sugar, Coconut Oil, English Lavender and Lemon-Balm Mint, and Sourdough Starter. They turned out perfect, moist and slightly dense, just as they should be! I cut the dough into eight squares, and then cut each square into four triangles. Ending up with 32 mini scones, perfect size for kids!

Green Bean Casserole Remix

Reviewed: Nov. 23, 2012
Green Beans must be thawed! I missed this note in the ingredient list and our casserole took a lot longer to cook, it was also more watery. It is much easier to serve if you use cut green beans rather than whole. We cooked chopped onion and garlic with the mushrooms instead of using the powdered version. Then we stirred in some cornstarch, before adding the milk, to thicken the sauce a bit. Used coconut milk in place of Half and Half, and left off the cheese to make it non-dairy. It turned out delicious! I would make this again!

Pumpkin Maple Pie Supreme

Reviewed: Oct. 25, 2012
I changed some of the ingredient to make this dairy-free. I used one 14oz can of Coconut Cream in place of the half-and-half. I also used 1/2 tbsp Pumpkin Pie Spice in place of the spices. It was delicious and everyone loved it, but it was a bit on the sweet side -didn't need any whip cream!

Sourdough Drop Biscuits

Reviewed: Aug. 28, 2012
These turned out very good, but I changed a few things to make them more biscuit-like. I used 1/2 cup cold coconut oil instead of vegetable oil, and I added 1/2 tsp baking soda and 1 tsp baking powder. I also upped the salt to 1/2 tsp, and mixed in dried blueberries. I cooked them on a pizza stone, and my whole family loved them!

Impossible Pumpkin Pie

This was so good! I made several substitutions for our allergies and diet, but the basics of the recipe is right on. A delicious crust-less pie, my whole family loved it!

Hot Tamale Pie

Reviewed: Apr. 20, 2012
This was so good! A hit with my whole family. I left out the cheese, because of allergies, and used three boxes of Jiffy. It was really easy, although time consuming considering you have to cook it and then bake it. Using left overs would really speed up the meal. I would definitely make this again!

Applesauce Bread

Wonderful! I left out half the sugar. I swapped half wheat flour for the AP flour, and half the butter for oil. I added Craisins and pecans. Perfect for a breakfast bread!

Very good! I used white whole wheat flour, added one egg, and switched half the sugar for honey. I baked it in a 9x13 pan, and it made a delicious dense and moist breakfast bread.

So good! I made 1 1/2 batch and cooked it a little longer. It was smooth, not gritty at all, and perfect for my guests who could not eat gluten.

Very good! I used 1 1/2 tsp baking powder and 1/2 tsp baking soda as recommended by another reviewer, and our pancakes were light and fluffy. They are not sweet at all, but we loved them. They were a big hit with the kids!

Chocolate-Covered Marshmallow Cookies

Reviewed: Jul. 27, 2011
Wonderful cookies! They are almost brownie/cake like in texture and taste. We added salted peanuts to the dough before baking. We topped the cookies with three mini marshmallows and an upside-down Hershey kiss at 8min of baking and then baked 4min longer.
