Pumpkin-Apple Muffins with Streusel Topping

These muffins were fantastic, and I didn't even use the streusel topping. I used fresh pumpkin, 1 cup of whole wheat flour (1.5 of regular) and only 1.5 cups of sugar. Really delicious! My husband isn't a muffin fan, and he ate several of them and asked me to make them again. Next time I'll try to sub some of the oil with applesauce.

Chocolate Chip Apple Cake

I really enjoyed this. I used 1/2 cup of butter and 1/2 cup of apple butter, in order to lower the fat content. I also used 1 cup of whole wheat flour and 1 1/2 cups of white flour, and it turned out great! I made half as muffins and the other half as a plain sheet cake. Both were really moist and tasty.

All-Day Apple Butter

I listened to other reviewers and put less sugar in it. I actually thought it was too tart and wished I had followed the actual recipe. I had to use an immersion blender to give it the proper texture. Good overall.

Banana Banana Bread

Wow, was that tasty! I even added only half the butter and substituted 2/3 cup of applesauce for the other half, and it was delicious. I also put 1 cup of whole wheat flour and 1 cup white (also a couple tablespoons of wheat germ) to make it healthier. Thanks so much for a great recipe.

Creamy Mushroom Pasta

I thought this was very good. I added an entire 8 oz. carton of mushrooms and actually thought you could even add more. Instead of the dried Italian seasoning I used a cup of fresh thyme. Very tasty.

Kitchen Sink Meatloaf

Irish Cream Bundt Cake

This was a huge hit at Christmas. I used a mini-bundt pan for half and a regular pan for the other half. I made half the glaze, and it seemed to be enough.

Blue Cranberry Sauce

I was a little worried, but it was a great hit at Thanksgiving. You definitely need to make it at least a few days ahead. I also thought it tasted better not directly out of the fridge. Heat it up or let it get closer to room temperature. I added orange zest and extra sugar. Next time I will add less blueberries. They kind of take over as is.

Graham Griddle Cakes

I think these are a very good alternative to Bisquick pancakes. They taste and look heartier. I also didn't taste the graham cracker, but the consistency was great. Thanks!

I thought this was okay, but the flavor of pumpkin is too strong. I would suggest using less pumpkin and adding more sugar, perhaps a little brown sugar.

I thought this was pretty good. I used olive oil instead of vegetable oil. I didn't have enough zucchini, so I used yellow squash as well. Very tasty!

Chocolate Icing

This icing is delicious. I think it tastes a lot like the icing on top of chocolate doughnuts. The only problem I have with it is that it is hard to spread, but adding extra milk helps.

Hamburger Stew

We really enjoyed this recipe. At first my husband thought the pork and beans taste was too strong, but we put fresh cilantro on top and some sour cream and he loved it. I added the corn like people suggested. I actually think hominy would be better than corn - better texture. I also added thyme, a bay leaf, and crushed red pepper. A great and easy recipe, thanks!

I was surprised by how well this cake came out. I agree that you should up the cocoa a bit. It is really tasty, especially since it has no eggs in it. It is also super easy.

Curried Cauliflower

I didn't care for this dish, but it might have been because I substituted yogurt for the mayonnaise. I also thought it was too saucy. You could probably use two heads of cauliflower.
