Jamie's Black Beans and Rice

OMG... To die for! Be sure to drain the black beans, add 2 cloves of minced garlic, and 1 can of diced tomatoes (drained). Should we want a full dinner I'm planning on adding 1 lb. of cooked and drained ground beef or turkey. Can't wait to see how that turns out. Definitely recommend this one!

Ginger Beef Stir-Fry

This recipe is definitely going into our rotation as an excellent "go to" recipe. I followed the recipe fairly closely... Didn't have any plum sauce... Found out how to make enough to replace the 1/4 cup asked for: 1 TBSP. EACH of low sodium soy sauce, plum jam or apricot preserves (I didn't have either, so I used orange marmalade and it was outrageously good), honey and then 1 clove of minced garlic. The soy sauce and garlic are repeated elsewhere in the recipe ~ go ahead and add those when needed, too. I didn't have any broccoli, so I subbed a bunch of asparagus. Also, had one of those bags of Fajita Beef from the Clubs ~ used that ~ and the flavoring in there went perfectly with the dish. Put it over some Basmati Rice and my husband and I were in heaven. Next time I'll double the sauce, as others have mentioned ~ that way there will be enough to pour a little over the rice, too. Thanks for posting...

Delicious Egg Salad for Sandwiches

Just made this recipe. A couple changes, though... Didn't have green onions or yellow mustard. Substituted 1/2 a yellow onion, rinsed, and 1 small pickle instead of the green onion ~ and used Dijon mustard instead of the yellow. I also added an extra hard boiled egg to make it a little thicker... Thanks for a terrific recipe...

Cheesy Baked Cauliflower II

This recipe rates 5 starts ~ even better ~ AWESOME!!!! I used 1/2 the butter, as other reviewers suggested. An excellent dish ~ when you get a bite with some tomato you feel like you've hit the jackpot.

Old Fashioned Potato Salad

I just made this recipes, substituting one finely chopped dill pickle for the relish, and got rave reviews from my husband. This is certainly going to be my "keeper" potato salad recipe from now on...

Mendocino Chicken Salad

I've made this dish many times and have given the recipe to lots of family and friends. Lately I've been adding chunk pineapple for a new twist and may like this version even better. It's hard to decide... :D
