Peanut Butter Brownies I

These were good. Wouldn't change a thing. They were good straight out of the oven, but they get better and chewier after you let them cool off.

Jambalaya Casserole

I cut this down to 8 servings and used an extra cup of chicken broth because I'm pretty sure you're supposed to have 2 cups of liquid for each cup of rice. I also used smoked turkey sausage. I loved it.

Dark Rye Bread

Other reviewers have said that this bread is very dense and heavy. I added a teaspoon of soy lecithin granules and a tablespoon of vital wheat gluten and found that this was not too dense and heavy. It's my new favorite rye.

Crazy Chocolate Cake

I make one very close to this except the one I use calls for half a cup of cocoa powder, 2 tablespoons of vinegar, 2 teaspoons of vanilla extract, and only a dash of salt. If you didn't like this recipe, try it with these modifications. You'll love it.

Best Egg Rolls

I've tried these baked and fried and they're definitely better fried. If you're gonna have egg rolls, then have egg rolls and fry them. I also increased the spices and added a little bit of hot pepper sesame oil to the meat/veggie mixture. I also used ground turkey instead of ground pork.

Whole Wheat Bread II

This is good bread and it was easy to make. If you're having stickiness problems, just incorporate more white flour in, a little at a time, as you knead. That's what I did and it came out fine. The kids loved it.

Oatmeal Peanut Butter and Chocolate Chip Cookies

I used vegetable shortening because I didn't have butter. I increased the flour to 1 3/4 C. and increased the peanut butter to 1 C. I added 1/2 t. salt and used quick oats because I didn't have regular rolled oats. I replaced the water with milk. Instead of eggs, I used an egg replacer made of ground flax seed and water. Just blend 1 C. of ground flax seed with 4 C. water in a blender for a few minutes. 1/4 cup flax mixture equals 1 egg. I used a whole 12 oz. bag of chocolate chips. I baked these for 12 minutes. These cookies were great. I couldn't ask for a more perfect cookie. Hubby and kids gobbled them right up.
