Slow Cooker Chicken Taco Soup

I made this today but didnt eat it for dinner since we had 2 power outages lasting over an hour each so it wasnt ready. Just turned it off and OMG its delicious. I followed the recipe using the beer and only had 2 chicken breasts which are plenty for me. I used black beans and pinto beans, could almost use another can of black beans. I used the original Ro Tel (never used before) its a bit spicy but not too bad but my daughter wont try this so next time I will just use diced tomatoes or just one can of Ro Tel. Cant wait for dinner tomorrow this is a keeper for me! Its after 11 pm and I want a bowl now :) Will make some corn bread and rice to go with it. Might even go with a polenta ?

Ground Beef Noodle Casserole

this sounded like a recipe my mom used to make and I never found her recipe for it. I really enjoyed this as did my husband. Only thing I would do is make sure to use a lean beef. I only had 80% on hand and it was a bit fatty for my taste. I did not add the salt and pepper (forgot) but it was fine, added a dash of salt at the table. Also used egg noodles which was nice with this, glad I had them on hand from a pot roast I made I can't imagine using plain spaghetti definitely a wider soft noodle works best. Will definitely make again

Pasta Carbonara

this is still on my stove! So yummy I can't wait to eat. I did cut back a little on the butter, used fat free cream cheese and skim milk. I added peas and parsley. And a bit extra of freshly grated asiago cheese. Will be making again

Slow Cooker Cranberry Chicken

I have been making Cranberry Chicken (this recipe ) in the oven for 25+ years - it was my moms recipe. I never thought to try it in the slow cooker! Will definitely try. Only have done it with both chicken parts and breasts - in the oven the breasts will dry out if you overcook. Can imaging in the slow cooker. Another tip - if you marinate the chicken in the sauce overnight it is even more flavorful.

Baked Potato Soup

This is my first soup - I cook alot but never tried soup before. Im not really a soup person. My husband loves potato soup so I thought I would try this seeing as its 2 degrees outside I used about 8 strips of center cut bacon and 4 potatoes. I followed some of the suggestions, I baked the potatoes first and then I added 1/2 of them used the emersion blender a bit then added the rest to help thicken. I skipped the basil, not sure if I would like it or not. Did use the hot sauce. Needs a bit more seasoning (S&P) but its great and will be adding this to my personal book. I wanted to add cheese to it cooking but husband isnt keen on that so added it on top as garnish with the bacon. Really easy to make and delish...

Easy Cheesy Chicken I

I used 2 cans of cream of chicken and 1 of cheddar soup. I added more garlic and did add broccoli about 30 minutes before done. I also only used 1/2 container of sour cream. Chicken was so tender and very good. Would make again but try 2 cans of the cheese soup vs 1. Served over brown rice. Very good and hubby enjoyed.

Mexican Lasagna II

This is a go to recipe for me. It is really easy to make and tasty to boot. My husband loves it too which is why I make it over and over again now. I use a bit more than 1 pound of beef, I found that wasnt enough for us, I also add some Old El Paso enchilada sauce or chunky salsa if I do not have enough tomatoes.

Cousin David's Slow Cooker Brisket

I really expected more from this after reading the reviews. I was very disappointed. It smelled amazing, but was too "tangy" for me. I did try adding a package of the brown gravy but it didnt help. I was hoping for a more BBQ flavor like one my mom used to make and noone has the recipe for, but this was not it. Was worth a try but I will not be making again.

Cranberry Chicken II

My mom had made this chicken for as long as I can remember. It is one of my favorites. I have made it with both breasts and parts. It is great either way. I only use one package of soup mix and 1/2 bottle of Catalina dressing. I never tried it in the slow cooker only in the oven. Unfortunately my husband is not a fan so I dont get to make it often enough for me.
