Beef Stew VI

I rated on the mobile app but wanted to comment. Delish!! I halved the recipe since I was cooking for 2. I also coated the stew meat with 1/4 cup flour, garlic powder and Costco Organic No Salt Seasoning and mixed it in a gallon baggie. I had extra flour when I poured the meat into the pan and it ended up being the perfect amount to thicken without adding more than the amount of cornstarch that was called for! I did add about 1/4 carton of veggie stock when I added the veggies as the liquid seemed a bit low. I used extra carrot and red potatoes (no celery, my bf doesnt like) and the veggies were cooked perfectly. Served with french bread for a perfect meal!

Amy's Barbecue Chicken Salad

Very yummy! I did make a few changes based on other reviews though. Instead of using heads of lettuce, I used 1 small container of organic mixed greens and then scaled back the rest of the ingredients to 1/2 cans of corn and beans. I also used chicken tenders instead of breasts (what I had on hand) and rubbed them with taco seasoning before I grilled them on an indoor grill pan. I added green onions, shredded cheese and black olives just for personal preference as well. For the dressing, I mixed 3/4 cup ranch and 1/4 cup bbq sauce and it was PERFECT! Delish :)

Spanish-Style Quinoa

This was very tasty! I didn't have green pepper so I just omitted it, added extra onion instead and it was still delish! I also just used taco seasoning instead of the separate seasonings, and added a bit more garlic salt and some cajun seasoning. A great alternative to rice, it was fantastic in a tortilla!!

Huckleberry Cheese Pie

Very yummy! The only reason I gave it 4 stars is because the directions for the crust didn't quite turn out for me. After 12 minutes at 400, stirring every 3-4 minutes, it started to burn and you could definitely taste the overdone crust, so that was a bummer. I'm going to try it again this weekend and turn the temp down a bit to see if that helps. Overall though, very delish!

Eggplant Sandwiches

YUM! I thought I had reviewed this already...I've made it twice in 2 weeks and it's delicious! The first time we just did eggplant with the garlic mayo on french rolls and the second time added the tomato and basil. I'm not a feta fan so I left that out and I wouldn't think it needs it. I did salt the eggplant and let it sit for about 15 minutes to get out excess moisture. I cut the eggplant into about 1/2 " slices and I started them out on the top rack under the broiler for the first 5 minutes, then moved them to the next rack for the next 5 minutes. Turned out great, no mushy or soggy eggplant!

Orzo with Parmesan and Basil

Delicious!! I made the recipe exactly as stated, only subbing vegetable broth for chicken as we're vegetarians. I had no problem with the liquid cooking up too fast, I had my stove set between the low and medium low settings and the timing was perfect, about 18 minutes. Delicious, fast and easy! Will make over and over again!

Fried Cabbage and Egg Noodles

This was pretty tasty! I don't think my pan was big enough though, the cabbage never really browned because there was so much butter! Once I combined the noodles and cabbage/onions ( I added 1 sweet onion) I did add about 2 T more butter and let it melt in. I also added garlic salt. YUM!

Fettuccine with Sweet Pepper-Cayenne Sauce

This was pretty tasty! I'm not sure I quite julienned my peppers since I'm not a pro, but I did have fairly thin strips of peppers. I used 1 red and 1 orange since I had them on hand. I also followed another reviewer's suggestion of not adding the sour cream until the very end and it was nice and creamy! I only used 1/4 tsp of cayenne since my SO can't handle the fire, but it was still very yummy! Next time I will add some tomato and onion for a little extra flavor.

Cajun Pasta Fresca

I really enjoyed this dish! I used 3 cans of tomatoes, partially drained, instead of fresh. Also added a bit more garlic out of personal preference. I didn't have any fresh parsley so I used 1 tsp dried. It had a lot of flavor and a nice kick to it without being too spicy. The mozz is a nice touch, it melts in and makes it kind of gooey. Will definitely make this again...yum!

Jo's Rosemary Bread

This was SO yummy! I am new at using the bread machine and have been testing different recipes. This was a winner! It baked up beautifully and was light, not so dense like other breads I've tried. Was wonderful warmed up with a bit of butter :)

Fabulous Zucchini Grinders

I LOVE this recipe! It is great as is, but can easily be adjusted. I like to saute an onion with the zucchini and add a pinch of red pepper flakes for a little zip. Easy and fast weeknight meal!

Tempeh Reuben

This was excellent! I did as the previous reviewer suggested and simmered the tempeh in the broth/liquid smoke/water mixture. After that I fried the slices of tempeh in a little oil, then assembled and grilled it. I do want to add that the recipe directions don't say anything about putting the 1000 island dressing on, but I advise you wait until after you grill it. This was sooo yummy, satisfied my craving for sure!

Spinach and Feta Pita Bake

I have to admit I didn't follow this recipe exactly, but I have made MANY variations of it. The pita's are so tasty! My favorite variation is to use garlic browned butter as the sauce, spinach and onions and a little bit of cheese, bake in the oven and voila! Also, I followed the tip to cook the pita for a few minutes before you add toppings and would highly recommend!

Honey Grilled Shrimp

My husband and I both LOVED this!! It had wonderful flavor, I made sure to keep basting it on the grill, every 15 seconds or so. I also reserved a small cup of the basting sauce for dipping, it was fantastic!
