Michelle's Soft Sugar Cookies

I love this recipe. I didn't have patience to chill them, so I rolled out the dough between two pieces of Parchment Paper, dipped the cookie cutter's in sugar before cutting and worked as fast as I could to get them on the prepared baking sheets. Worked like a charm and they are yummy! Thanks Michelle

Chicken Florentine Casserole

My husband, as well as my 3,5 & 7 year old enjoyed this dish. I followed the advice of others and used fresh spinach, and mushrooms sauteed with minced garlic. I also used uncooked chicken to speed up the process. Unfortunately, I ended up having to cook the casserole for 20 more minutes anyway and had a watery dish from the chicken juices. I would make this again, still using sauteed fresh veggies but i'd precook the chicken while preparing everything else. The sauce adds plenty of moisture to the meat. I would buy a fresh cut of Parmesian and hand grate it. The grated Parm for topping pizza is way too salty. @ BRYANO320: great recipe, Thanks for adding it. :)

Panhandle Grits

We really enjoyed this meal! It was really fun to make and it turned out just like the picture. I put 1/2 onion, fresh garlic and a bit less water. I like thicker grits. 1/2 C of SHARP cheddar really gives a richer flavor.Per other reviews on a similar dish, I gutted the tomatoes and added them next to last to prevent sogginess. by the time we ate they were softened just enough. This was a really fun meal to enjoy during black history month :)
