Emily's Famous Sloppy Joes

This is my first review! I couldn't keep quiet about this one. This recipe is AWESOME! I am always happier making something from scratch than from a can. These are the best sloppy joes I've ever eaten! My picky preschoolers even ate them, which is a miracle in itself. I followed the recipe to a "T" and wouldn't change a thing!

Texas Coleslaw

In all fairness, I did make quite a few changes, but it was because I was making it at the last minute and just had to use what I had on hand. That said... here's what I did: I omitted the cayenne, radish and the lime juice (didn't have any). I kept the entire amount of cumin as I love the stuff. I also added a splash of vinegar as well as a little (maybe 1/8-1/4 cup?) sugar. I must say, this was a HIT. I did not have any sauerkraut available so I used this on reuben sandwiches. I'm typically very picky about using kraut, but this was an awesome substitute!

Outrageous Chocolate Chip Cookies

I share the sentiment that this is probably one of the best I've ever made. I was skeptical - the list of ingredients don't seem very different from many other recipes. I was pleasantly surprised. My 4yo and 5yo kids loved making them and the batch was easy to stir. It made three dozen exactly. I didn't change a thing! Thanks!

Easy Homemade Chili

This recipe gets four stars for flavor - it needs a bit of jazzing up, but definitely good for using mostly canned ingredients. However, I gave it a fifth star because you really can't beat this recipe for speed and ease. It took me about ten minutes to brown the beef and throw the rest of the ingredients in. For the flavor I get for 10 minutes worth of work, it's definitely worth 5 stars! I like that this recipe uses ingredients we normally have on hand. I wanted something fast, easy and hearty today and that's exactly what I got. I'll make a pan of cornbread and we'll have a fabulous dinner!

Baked Sweet Potatoes

This is a wonderful recipe. Like others, I wanted a good, healthy recipe that wasn't drenched in sugar or marshmallows. This really fit the bill! I did add more salt as I find potatoes generally need a significant amount to bring out the flavors. I have a whole box of sweets and will likely be making this a lot!

Peach Cobbler Dump Cake I

Wonderfully easy and delicious dessert to make! My 6- and 8-year-olds did most of the work. I used peaches in light syrup and at the suggestion of others, sprinkled with brown sugar as well as the cinnamon. I baked mine in a convection oven and it was done in about 30 minutes. So good served warm with vanilla ice cream!!

Cream Cheese Frosting II

I can't believe I haven't rated this until now. This is practically the ONLY frosting recipe I use anymore. I refuse to use canned frostings... the so-called "Cream cheese" frosting in a can taste like chemicals! This recipe is an absolute WINNER. I make it exactly as stated, only I cut it in half for the perfect amount for a 13x9x2 cake. I'd keep it as is if you are making a layered cake. As others have noted, this is for real cream cheese lovers. It's not sickly sweet, but very cheesy and delicious. I've made it for carrot cake, chocolate cake, and most recently, David's Yellow Cake, which can be found on this site. If you love cream cheese, you will NOT be disappointed!

Best Brownies

This is my favorite brownie recipe ever! I've made it way too many times to count. Tonight we added a twist. I threw in about a half cup of peanut butter chips. It was to die for! And as the title pages says, "These brownies always turn out!" It's true!

Quinoa Veggie Salad with Zesty Vinaigrette

This is an awesome salad! Beware if you are using a powerful blender like a Vitamix and cutting the oil in half as some have suggested... it comes out VERY thick, like pudding! But still incredibly good. I just folded it into the salad and it worked itself in just fine. But there will be NO liquid dressing. Also, I used Kalamata olives because that's what I had and I also added about 1/2 cup of crumbled feta cheese. DELISH!

Fluffy Pancakes

I should have reviewed this long ago. I've made these dozens and dozens of times and they ALWAYS turn out fluffy and amazingly delicious! I will never, ever buy pancake mix. These are far better than anything a mix can give you and so easy to make. Plus, the recipe uses ingredients that most people have readily on hand!

Golden Sweet Cornbread

This one is a definite keeper! I have searched high and low for a really good, sweet cornbread recipe that still tastes like cornbread and not like cake. This one fits the bill perfectly! I've made it at least four times in the past couple of months and it always comes out perfectly. I use a convection oven so turn the temp down to 375F and keep the cooking time the same. Perfect!
