Upside-Down Apple Pecan Pie

Reviewed: Oct. 3, 2009
This is GREAT! What a pleasant extra to apple pie! I "cut" time and calories by using store bought pastry crust and a no-sugar pie filling. It was beautiful and great. My husband gave it a solid "10", vowing to prefer this for thanksgiving over the standard regular apple or pecan pie!

Shrimp Fettuccine Alfredo

Reviewed: Aug. 19, 2008
Great recipe! Changes for me were trying to "knock it up" nutritionally. I used whole grain and a spinach fettucine pasta. Used half the amount of butter, replacing the other half with "SMART BUTTER" (trying to cut down calories and fat a little bit). And of course, used the fat free half & half for the heavy cream. TURNED OUT GREAT!!!!!!!!! Husband was thrilled to be able to almost "legally" eat fettucine alfredo!

Roasted and Curried Butternut Squash Soup

Reviewed: Jan. 7, 2007
Okay, I must confess,I've made this twice and it's a keeper! 1st time I made it, I started off by accident NOT reading the recipe, and cut the veggies, sticking it in a pot with vegetable stock and while it was boiling away proceeded to read the recipe... Well, after all of that, it turned out terrific! My husband proclaimed it his favorite, yet! Then 2 weeks later, I roasted the veggies and must admit it was even better than the first time! So, if you don't want to "mess" with roasting as some have suggested- don't- boil it and run it through the blender/food processor and you'll have a definite keeper recipe! But if you are patient and roast everything, you will be rewarded handsomely for your effort! My husband and I thank you for this terrific, low cal meal!

Artichoke Chicken

Reviewed: Dec. 4, 2006
Terrific, easy recipe. I used LIGHT mayo and just sprinkled the pepper directly onto the chicken before spreading the mixture on to cook. Excellent recipe, low cal and you can make it lower in fat if you use a light mayo! Extremely good, my husband LOVED this!
