Slow Cooker Beef Stroganoff I
I read a bunch of the reviews and followed some of the alterations. I sauteed the onion with some fresh garlic and added the meat to just brown the outside, not cook all the way through, before adding it to the sauce in the slow cooker. I added about a half cup of sour cream for an extra tang. Served it over egg noodles and it was pretty good. I'll probably make it again as it was easy and my kids also ate it. It was very good as left overs the next day for lunch too :)

Grandma's Lemon Meringue Pie
Made this for my MIL since it's her favorite. It turned out fabulously! I also added about a quarter tsp of vanilla to the curd, but that's the only change from the original recipe I made and it was really good. I did take the suggestion and let it cool for about an hour after baking and then refrigerate for about 3 hours after cooling. There was no pie left by the end of the evening!

Pumpkin Chocolate Chip Cookies III
My family loves these cookies! I have altered the original recipe some: I substitute no sugar added applesauce for the vegetable oil and use 1 cup of whole wheat flour and 1 cup of white flour (using all whole wheat makes them pretty "grainy") instead of 2 cups white flour. Also, I use a whole bag of the mini-semisweet chocolate chips. I have found (by not following the directions as closely as I should have!) that if you go ahead and add the milk and vanilla to the pumpkin mixture and the baking soda to the flour mixture, that the cookies turn out the same as when you separate them out like the original recipe says to do. They are very cake-like cookies, nice, thick and hearty and I end up having to bake my at a higher temp. and longer than the original recipe: 375 for 12 minutes, although it may just be my oven...
