Bubba's Jambalaya

This recipe was super easy and tasty! Didn't have bacon but I did save some bacon grease from breakfast over the weekend which added a great smoky flavor to the vegetables. Used smoked turkey sausage, chicken and shrimp - all seasoned with cajun seasoning before browning in the pan. Since it was just the two of us, I kept all of the meat and vegetable amounts the same but only used 3/4 C of uncooked rice and 1 1/2 C water (with two chicken bouillon cubes). This gave it a great consistency, not gummy like other reviewers mentioned. Also made it a little more spicy by adding hot sauce at the end. Served with a lemon wedge and fresh parsley. I definitely recommend the lemon. Thanks for the great recipe!

Blueberry Nut Oat Bran Muffins

These are great - especially since they are so healthy! I subbed 1 TB of flaxseed and 1/2 cup of unsweetened applesauce for the oil and topped them all off with streusel (1/2 C brown sugar, 1/2 C oats, 2 tsp butter, little cinnamon). I didn't have any bran so I soaked a little All Bran cereal in skim milk and mixed it in with the wet ingredients instead of the dry. My only issue was removing the muffins from the pan. I only used 1 cup of blueberries but they must have sunk while baking and ended up making the bottoms of the muffins too moist to remove from the pan. That said, they tasted great!

Tres Leches (Milk Cake)

I made this cake to finish off a special Latin-themed dinner for my husband last night. Since it was just the two of us, I halved the recipe and baked it in an 8x8 pan. After making the batter, I wasn't sure how the cake would turn out because it was a little on the thick side. After baking, though, it turned out very light and airy. I used skim milk instead of whole and it still turned out perfect. My husband (whose parents are from South America) absolutely loved it topped with a few strawberries. Will definitely make again!

Ginger Glazed Mahi Mahi

This is a fast and easy recipe for fish. I added in some extra ginger and garlic to make it more spicy. My husband and I both really enjoyed the mahi served with brown rice and broccoli sauteed with garlic and soy sauce. Thanks for the recipe!

Slow Cooker Chicken and Dumplings

This was really easy and tasty. I added in some extra vegetables and let the dumplings cook for almost triple the time. At the end, I stirred in a few tablespoons of heavy cream and it turned out great. Perfect for a cold night!

Robbi's M&M Cookies

These cookies were great! I halved the recipe and used butter-flavored shortening. I also added in red and green M&Ms as well as some chopped walnuts. I put parchment paper on the cookie sheets before baking, so I had to leave them in the oven for a few extra minutes. They turned out with perfectly golden edges and a soft center. These were better than the M&M cookies I made over the holidays and will definitely be included in my Christmas cookie reportoire for next year!

Bean and Tomato Stew with Sage

I omitted the sage and used some basil. It tasted a lot like italian spaghetti sauce. Might have been a lot better if I followed the recipe.

Lentil Lemon Soup

Overall a good soup. I added a lot of extra lemon and ground black pepper. Followed the suggestions of others and only cooked the lentils for 25 minutes. I served it with some warm pita and everyone seemed pretty happy. I will make it again.

Roasted Red Bell Pepper Soup

This soup is very unique. I added a few basil leaves to the last batch in the blender and it tasted great. I also didn't fully puree all of the soup to give it some texture. I loved it!
