Bubba's Jambalaya
This recipe was super easy and tasty! Didn't have bacon but I did save some bacon grease from breakfast over the weekend which added a great smoky flavor to the vegetables. Used smoked turkey sausage, chicken and shrimp - all seasoned with cajun seasoning before browning in the pan. Since it was just the two of us, I kept all of the meat and vegetable amounts the same but only used 3/4 C of uncooked rice and 1 1/2 C water (with two chicken bouillon cubes). This gave it a great consistency, not gummy like other reviewers mentioned. Also made it a little more spicy by adding hot sauce at the end. Served with a lemon wedge and fresh parsley. I definitely recommend the lemon. Thanks for the great recipe!

Blueberry Nut Oat Bran Muffins
These are great - especially since they are so healthy! I subbed 1 TB of flaxseed and 1/2 cup of unsweetened applesauce for the oil and topped them all off with streusel (1/2 C brown sugar, 1/2 C oats, 2 tsp butter, little cinnamon). I didn't have any bran so I soaked a little All Bran cereal in skim milk and mixed it in with the wet ingredients instead of the dry. My only issue was removing the muffins from the pan. I only used 1 cup of blueberries but they must have sunk while baking and ended up making the bottoms of the muffins too moist to remove from the pan. That said, they tasted great!

Tres Leches (Milk Cake)
I made this cake to finish off a special Latin-themed dinner for my husband last night. Since it was just the two of us, I halved the recipe and baked it in an 8x8 pan. After making the batter, I wasn't sure how the cake would turn out because it was a little on the thick side. After baking, though, it turned out very light and airy. I used skim milk instead of whole and it still turned out perfect. My husband (whose parents are from South America) absolutely loved it topped with a few strawberries. Will definitely make again!
