Italian Twisted Balsamic Pork Chops (Gluten-Free)

This is a very simple dish using food you would most likely have available in your pantry. I was curious about what the balsamic vinegar would do. It seemed like a lot of seasonings so I just sprinkled them lightly over the chops after coating them with the vinegar. My pieces were not really thick so that's why I adjusted the amount. These turned out tender, not dry, and very tasty. I will probably make these again.

Cuban Ropa Vieja

I thought this was fantastic! My measurements were a little different (more beef broth and less tomato stuff) because that's what I had. I also used a chuck roast and added a can of green chilies as well as a packet of sazon, salt and pepper, a little more vinegar. I thought it was better the next day. With due respect to the Cubans, thank you for the flavorful meat, but we can be flexible enough to eat it with rice, in a tortilla, or inside a chewy French roll. YUMM!

Salmon Stew (Abalos Style)

I LOVE THIS! Ironically, I added similar ingredients as another reviewer did before I read the reviews. To make it more hearty, I added celery, carrots, spinach, and even a little cabbage and cauliflower because I love vegetables. Next time I will add some cubed potatoes as well. I also used chicken broth instead of water, and added half a can of diced tomatoes with chilies. Delicious and so healthy!

Tasty Lentil Tacos

I love lentils, and this was a good way to use them. I added chopped veggies like green peppers, zucchini, and cauliflower, some corn and a can of green chilies. I froze servings in a muffin pan and popped them out in a freezer bag to have for later. Thank you for this recipe!

Pasta Con Sarde (Pasta with Sardines)

Many years ago I was in Sicily and was served this dish. I didn't know what it was but I loved it. Now I have found it in Allrecipes! They added chopped fennel leaves and pine nuts is what I remember. Anyway, I am so glad I now can make it! I reduced the bread crumbs by half, as well as the olive oil by even more. I also used brown rice fettucini which I much prefer over whole wheat pasta. I used Chicken of the Sea sardines. So delicious!

Mushroom Burgers

I have thrown away all my other veggie burger recipes (with beans, lentils, garbanzos etc.) and will only make this recipe. I added 1 cup of oatmeal and sprinkled on some ground flaxseed which really binded it together well. Tastes like a real hamburger!

Valentino's Pizza Crust

As in another review, my edges were perfect, but the middle wasn't baked through. Next time I will partially pre-bake it first, then add the toppings and bake again. Or as another did, bake at 400 for 20 min. I added basil, oregano, and garlic powder to the dough, and sprinkled corn meal on the pizza stone. I can't wait to try this again...LOVED the crust!

Zucchini with Chickpea and Mushroom Stuffing

So many reviewers are saying that the mixture didn't "hold together". Simply dice the whole zucchini and saute it with the rest of the ingredients. It won't look as pretty, but it will be easier to eat.

Chuck's Favorite Mac and Cheese

For me, this was very bland. As others said, it lacked something, and the amount of breadcrumbs took away from the creaminess of the cheese sauce. I am a comfort food lover, and this was a big disappointment. I followed the recipe to a "T" and even doubled it because I expected to love it and freeze portions. Now I am stuck with a huge pan of tasteless noodles :( I'll try to add a few things and hope to save it.

For those of you who complain about the texture after changing the ingredients--using margarine or butter instead of the shortening the recipe calls for drastically changes the texture of the finished product.

Healthy Banana Cookies

Personally, I really liked these. I added a little coconut and cinnamon. I'm into healthy eating, so I don't mind the little differences that might happen when you leave out "bad" ingredients. These were very slightly rubbery (maybe my fault?) and I would hesitate before I offer them to others. My 16 month old grandson loves them!

OK, so this isn't the authentic Irish Soda recipe, but it is very delicious made with raisins, and the Irish lasses at work loved it as much as the rest of us. This is the one I will keep!

Rice Cereal Energy Bars

I made this recipe with some minor changes according to what I had in the pantry. I formed them into little balls for my grandson, and we call these 'cookie balls'. Great to make in the summer when you don't want the oven on.

Salisbury Steak

This tasted too 'oniony' to me. The second time I made it I used condensed beef broth instead of the onion, added sliced mushrooms,a dash of Gravy Master, and left out the ketchup as others suggested. I agree that this is a good recipe with some tweaking needed to suit your tastes.

This was delicious! I used frozen pre-cooked shrimp, because that was what I had, a little olive oil, and fat free half & half. Spooned over whole wheat pasta. I will make this again.

Spicy Fish Soup

I love this soup! It seemed like a lot of chili powder, but I stuck to the recipe as is since no one else commented on it, and it was very, very good. Just enough heat without being too overpowering.
