Baked Buffalo Wings

These wings were really quite tasty. I'm not ready to say that they're the best I've ever had, but they certainly rival that of most restaurants and we were very pleased with them. I think there are a few musts with these if you want them to be crispy: 1) pat your wings dry before coating with flour and let them sit in the fridge. Ours sat for an hour and that was perfectly fine. 2) Don't line your pan with foil. While it might make clean-up a little easier, it does nothing to help crisp your wings. We spread a little olive oil on a cookie sheet and spread them evenly. At about the 30 minute mark we drained any oil or juices off and then put them back in the oven. 3) Don't put the sauce on right away. We baked ours for about 25 minutes, flipped them, baked for another 15 or so, and THEN rolled them in sauce before putting them back in for another 10 minutes or so. Our wings were crispy and delicious. Hopes this helps some!

Potato Latkes I

Egyptian Feta Cheese Omelet Roll

Like many others, I felt this was a good base recipe from which to add your own ingredients to make it 4+ stars. Personally, I added fresh mushrooms, scallions, and onion to the feta mixture. Next time I might add fresh garlic or sun-dried tomatoes. Rolling the omelette seemed to really pull the ingredients together in a lovely way. Will make again!

Spicy Rapid Roast Chicken

We really liked this...although I must admit we didn't do the "rapid roast." We had time and I would just as soon bake it at normal temp. for longer. Having said that, the seasonings are lovely! I think I got a little carried away with the chili powder, but that's just me! I like kick! Will make again!

Sesame Seared Tuna

If I could give this six, seven or more stars I would! Simply divine. We loved the marinade and we seared the tuna for 30 seconds as directed - perfection! If you have problems with rare tuna please please try it! It really is delicious! Will make again and again!

Garlic Mashed Potatoes Secret Recipe

Sauteed Garlic Asparagus

My husband and I do our own variation of this recipe, which involves lightly coating the asparagus with olive oil and topping with chopped garlic. We then put it on the grill and cook until it gets a little crispy on the ends. Very delicious!

Stuffed Peppers My Way

These were delicious. We used goat's cheese instead of the feta because we had it on hand and it turned out really well. I think next time I'll experiment with bleu cheese. Will make again!

Bessy's Zesty Grilled Garlic-Herb Chicken

Made this recipe this evening for my husband and I and I have to say that I wasn't as impressed as I thought I would be. My husband did love it, though. For me, the flavor was almost too subtle. I liked the addition of the saffron and garlic, but I would add more cayenne next time to give it a little more tang. As it was it was a little too sweet for my tastes. May make again.

Spaghetti Olio

Yummy dish that uses ingredients most people already have. My husband and I added more garlic and used less butter, as per someone else's suggestions. We also added some fresh rosemary, ground black pepper, and a little cajun seasoning. Delicious. Will definitely make again!

Rice with Herbes de Provence

Excellent side dish! Loved the flavor of the herbs (we used rosemary, basil, parsley, and thyme). My husband reserved the stock with herbs, added mushrooms, and created a soup to accompany dinner. Lovely!

Lemon Rosemary Salmon

Made this last evening for my husband and I and we were both highly impressed. We took the advice of some and put olive oil directly on the salmon and we also squeezed lemon over the salmon after it was ready. We served it with roasted tomatoes and fresh green beans with garlic and it was delicious! Quick and easy, too!
