Easy, Cheesy Tortellini Bake

This recipe had way too much spinach and way too much sauce. The tortellini were just floating around in the sauce. I wanted something more compact. I also didn't like the taste of the spaghetti sauce and alfredo sauce mixed. This recipe was very easy, but just didn't taste good.

Bow Ties with Sausage, Tomatoes and Cream

I followed this recipe exactly. I don't understand the rave reviews, but no one in my family liked it. It didn't have much taste and I didn't care for the sauce. The sausage needs to be drained. We had a greasy sauce. We won't make it again.

Baked Macaroni and Cheese

This is a very easy recipe, but nothing fantastic. I followed the recipe exactly. It needs more cheese and more flavor. My husband and I both had to salt ours because there wasn't a lot of flavor. I might try it next time with different cheeses as well. The noodles on top get really hard. I didn't mind, but my son hated that. I might sprinkle some cheese on the top before putting it in the oven to help prevent that. This is a good basic recipe that can work with modifications.

Apple Cake VII

Very yummy! It takes a long time to peel, core, and grate all those apples, but this is such a good cake, it's worth it. It's super moist and has excellent flavor. I did not have any problems with soggy cake as other reviewers mentioned. I made sure to fold in the apple really well and distribute it evenly throughout the batter. I think that helped.

Very easy and it took very little time to get these assembled and into the oven. My whole family liked them. They have good flavor, but they are nothing fancy. I followed the recipe exactly and thought it was good as is, but it could be tweaked a bit to suit your personal taste. I will make these again.

Southwestern Egg Rolls

I made these for dinner and I was disappointed. Based on the reviews, I was expecting something amazing. I followed the recipe almost exactly except I left out the jalepenos, used cilantro instead of parsley, and baked instead of fried. The mixture was very very bland. I may try to make it again and double up on the seasonings because these had no flavor whatsoever. Thank goodness I had made up a batch of Amy's cilantro dip and we dipped the egg rolls in there to give them some taste.

Pizza Without the Red Sauce

Very yummy and super easy to prepare. My husband raved and said it was better than any pizza he's had at a restaurant. He liked it even better the next day. I will definitely make it again.

Avocado Salad

Yummy! Very fresh tasting and a nice blend of flavors. We scooped it onto tortilla chips and my husband also put it on top of his tostada. Even my 2 year old ate it.

Quick and Easy Green Chile Chicken Enchilada Casserole

This tasted really good, but was really ugly. As I was dishing it onto my husband's plate, he asked what it was. This casserole was a soggy soupy mess. I think it's too much sauce, sour cream, and melted cheese. It all combines together and it's just mush. Add soggy tortillas and it's so runny. I really liked the flavor though, it just needs to be firmed up. I might try it again, but use less sauce and sour cream or try to add something else.

Butternut Squash Soup

I only used 6 oz. of cream cheese and it was perfect. Very creamy and thick, but the taste was not too strong. I roasted the squash in the oven and it made it easier to work with. Next time I will leave out the cayenne or put an even smaller amount, but it was too spicy. Good soup otherwise.

Philly Cheesesteak Sandwich with Garlic Mayo

This is so yummy! And it's easy to prepare. I had some leftover mozzerella so I dumped that in with the other cheeses. It was creamy and the perfect comfort food.

Cheddar Baked Chicken

This is a very easy dish to prepare. It really is fool-proof. I used non-stick spray instead of butter for the bottom of the dish. I also did not have any rice krispies, but the recipe turned out well anyway. The flavor was good and the texture was crispy. Both my husband and 2 year old gobbled this up. A definite keeper!

Garlic Red Potatoes

I was not impressed with these potatoes. As many reviewers mentioned, the cooking time is completely wrong. At 350, it took me a little over an hour to cook the potatoes. I cut my potatoes into eighths, not fourths as the recipe suggested. The flavor was just ok. All of the flavor falls to the bottom of the dish so you have to spoon it over the potatoes when you serve them or else they will have no flavor. I won't make these again.

Quick Hoppin' John Soup

Very good soup and super easy. I used hot and spicy sausage instead of the sage sausage and it gave the soup a little kick. I only added one can of tomatoes because I'm not a huge fan. Otherwise I followed the recipe exactly. It turned out great. Very flavorful. It would be easy to add other ingredients to it and customize it to your specific tastes.
