My favorite things to cook
I really have no favorite dishes. I consider myself a gourmet home chef. My international cuisines are Country French, Northern Italian, Mandarin, Schezwan, Cantonese, Caribbean, Greek and Moroccan, to name a few.
My favorite family cooking traditions
When having family or friends over for brunch or dinner, I love keeping my menus a secret until the presentation is made. In many cases I have prepared a menu that my guests have not heretofore seen.

Every meal.
My cooking tragedies
I was serving barbecue steaks for our church members at the home of our Bishop. I had removed about 8 steaks from the grill. While walking back toward the house, our host's dog ran in front of me . . . knocking me down. I landed on my keester and the steaks were scattered about the lawn. We won't mention the soufflés that had blowouts!!

Asparagus Lasagna
Thin asparagus, par boiled 1 minute and placed in ice water would improve the taste and texture of this recipe tremendously. Another tip regarding the sauce. When making sauces or graves that require thickening agents such as flour, corn starch, etc., place half your liquid in a small jar or other lid tight container, put in your thickener, tighten lid and shake for about 10-15 seconds. Stir into heated liquid. This method assures no lumps.

Emily's Famous Apple Pie
This is a simple and good recipe. I would make one suggestion. Try using half Granny Smith and half Gala apples. I have used this combination for years and all who have tried my apple pies seem to like it better than an all Granny Smith apple pie.
