Chicken Fried Chicken

I would rate this a 5, but changed it. Sure it is wonderful as written, but added extra ingredients. This is what I did - as other suggested I used an egg, but also added two tablespoons of Ranch dressing. I also added two finely chopped jalapenos. Instead of the saltines I used Keebler Buttery Garlic crackers. It was very moist and we loved it. I am thinking about adding chopped pecans to it the next time without the jalapenos. Just all kind of things you can do with this wonderful recipe. Thanks CASSJW for a fantastic recipe.

Old Settlers' Baked Beans

Made this yesterday. I would rate it a five, but did change it. I added two jalapenos, a sprinkling of red pepper flakes instead of black pepper, Left the white sugar out completely and next time will cut down on the brown sugar. I cooked the bacon, drained the grease, then added the rest of the ingredients. Very good dish. My hubby loved it. I'm sure it is just as good as is, but we like spicy. Next time I think I will add shredded cheese to it.

Absolute Mexican Cornbread

Both my husband and I loved this cornbread. I would give it more than five stars, but changed some things as others suggested. Half the butter, Half the sugar. I added red pepper flakes and chopped jalapenos. It makes a lot, but freezes beautifully. Try it - I guarantee you will love it. Will be added to my favorite recipes. Love it.

Pear Custard Pie

I would rate this a 5, but changed it so I can't. My changes were I used Splenda in place of the sugar because my hubby is diabetic. I also sprinkled the top with chopped pecans. This pie is really good. I had no problems at all with it and will make again.

Green Chile Frittata

I made this yesterday and loved it. It came out perfect. I should not have rated this a 5 because I only made half the recipe and I added some diced onion and a whole fresh tomato. It was just that good. Make this, you will not be sorry.

Empanadas

These were really good. The only reason I did not give it a 5 rating was because I added ground pecans to the dough. I also used sugar free preserves because of my husband's diabtes. Will make these again, but not use as much preserves because they leaked. My fault on that one.

Cuban Midnight Sandwich

I made this sandwich for company last week and everyone loved it. Also, I had doubled the recipe and had some left over. Yesterday I wrapped it in aluminum foil and reheated it slowly in the oven. It tasted better than before. Please try this it is so good.

Country Apple Dumplings

This is fantastic. The only changes I made was to use Splenda - both white and brown - instead of sugar and diet 7-Up because my husband is a diabetic. As others suggested cooked the butter/sugar mixture until it slightly thickened and sprinkled the apples with cinnamon before wrapping them. Oh, also sprinkled chopped pecans to the top before baking. Thanks for such an easy delicious recipe.

Twice Baked Potatoes

Baked these for Christmas and froze six halfs to use at a later date. Reheated today and I swear they were even better than on Christmas day. I will most certainly make these again. Thanks for a great recipe.

Sandy's Chocolate Cake

Thanks Sandy. This cake is not only fantastic in taste, but its appearance is beautiful. Served this over the holidays and everyone who had a taste fell in love with it and wanted the recipe. I followed instructions exactly except used parchment paper on the bottom of cake pans and chopped pecans between the layers along with the frosting. Also placed whole pecan halfs for decoration on finished cake. Just beautiful.

Peppermint Brittle

Fantastic and oh so easy. I used the Hersey's milk chocolate bars on the bottom with chunks of the peppermint and also - as others suggested - strained the peppermint in a colander (sp) and mixed the powder in with the white chocolate and used the larger bits to top it. It is beautiful and very tasty. Thanks for such a great recipe.

Eggnog Thumbprints

These cookies are really good. I doubled the recipe and as a reviewer suggested added rum extract and nutmeg to the batter. I did use Captain Morgan Spiced Rum (2 1/2 tablespoons) in the frosting. Sprinkled with the nutmeg as stated in the recipe. Turned out beautiful. Will give as Christmas gifts along with all the great cookies I made from this site. Thanks Susan.
