Focaccia Bread

THIS WAS AWESOME I made it as the recipe said - but drizzled with oil and sprinkled with cheese for the last few minutes. Next time bake on parchment.

Lemon Cranberry Muffins

I hesitate to rate this recipe because I changed a lot of things! First I used whole wheat flour (not whole grain); only used 1 cup sugar; 1/2 cup lemon juice, 1/2 cup soy milk, and coconut instead of nuts. Also - I prefer butter to oil so I used butter - creamed the butter, sugar, eggs, added wet ingredients, then added the dry ingredients. They turned out great though!

Honey Oatmeal Bread II

excellent bread! I used 1/4 cup honey and 1/4 cup mashed squash. I also added 1/4 cup flax. Makes great raisin bread!

Light Chocolate Chip Cookies

These are GREAT for low fat, reduced sugar cookies. If you compare them to the full fat, sugary ones theyr'e ok.... but the very best of the Light variety! NOTE: 6 Tbsp is just slightly more than 1/3 cup

Slow-Cooker Pepper Steak

Excellent and easy. I waited until the last 45 min to add the peppers. At the same time I scooped off the liquid and mixed it with cornstarch to thicken.

Homemade Shake and Bake Mixture

This was excellent! I didn't use the celery salt and garlic salt (just use powders instead) so I needed more salt. Tasty though! I mixed 1/2 cup squash puree with an egg to coat the chicken then dipped in the shake and bake! Moist and delicious!
