My Special Shrimp Scampi Florentine

Per the other reviews I only used a little butter & olive oil, just enough to coat the pan. I also added some fresh lemon juice & white wine based on other reviews. I also added a lot more pesto because we like it. This dish was really good, and I'll make it again. Might add some mushrooms next time instead of the spinach - while we love spinach, it just seemed to get "lost" in here. Think I'd add mushrooms instead.

Marty's Thai Chicken Satay

This is absolutely worth every bit of effort! The only ingredient I couldn't find was muscovado sugar, so I substituted brown sugar. It was delicious, and all five of my picky kids gobbled it up! YUMMY!!!

Chicken Noodle Casserole

I doubled the recipe for our large family (five kids). I added a handful of fresh baby spinach when to the chicken mixture. I used Velveeta cheese (simply because I was completely out of cheddar & didn't want to go to the store). Also out of egg noodles, so I used wagon wheels, which my kids love anyway. Made it in the morning and stuck it in the fridge until time to bake. Served it up with some french bread. WOW~This recipe is GREAT! Even my picky kids ate it up! I will try it with cheddar next time, but the Velveeta worked really well, and made the sauce rich & creamy. Perfect comfort food on a snowy day! I will continue to add some fresh spinach too, (because it's an easy way to get some extra veggies into the kids), and it made the dish look so pretty too!

Asian Ginger Dressing

I followed the recipe as it says, and I agree there's a bit too much soy sauce. Loved the flavor, I'll make it again using about half the soy & it should be perfect. Think I'd like it better with sesame oil, but didn't have any on hand. I'll try that next time, too.

Thai Pork Satay

I thought this was great ~ even my kids snarfed it up! I was late getting dinner together, so I didn't have time to marinade, just brushed the sauce onto the skewers & threw them on the grill. I did add a tablespoon of Chinese Cooking Wine to the sauce, and I didn't have green onions on hand. I'll try marinating it next time, but it was still great. I skipped the veggies (only because my kids would've freaked if peppers touched thier meat!). Outstanding, easy dinner, especially for those nights when you need something quick.
